This is great for those times when I have a chocolate craving that just won't go away. It's quick, easy and makes a very small portion. I've tried it with semi-sweet chocolate chips, can't wait to try it with peanut butter chips and white chocolate chips. Great for an afternoon snack for the kids and it's simple enough that they can make it themselves.

4 tablespoons flour (not self-rising)
4 tablespoons sugar
2 tablespoons cocoa powder
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
nuts (optional)
1 dash vanilla

Steps:

  • Required: 1 coffee mug.
  • Add dry ingredients to coffee mug and mix well.
  • Add the egg and mix well.
  • Add milk and oil and mix well.
  • Add vanilla, chocolate chips and nuts if desired.
  • Put the mug in the microwave and cook on high for 3 minutes.
  • The cake will rise over the top of the mug, but don't be alarmed. Allow to cool a little and tip out onto a plate if desired.

I make this as a quick snack or when you "need" a quick dessert - and the kids love making it themselves.

4 tablespoons all-purpose flour
4 tablespoons white sugar
2 tablespoons cocoa powder (Dutch process, if available)
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1 egg
3 tablespoons milk
1/2 teaspoon lemon juice
1 1/2 tablespoons oil
1/2 teaspoon vanilla
3 tablespoons chocolate chips (optional)
1 tablespoon chopped nuts (optional)
2 tablespoons chocolate syrup (optional)

Steps:

  • Use one large coffee mug.
  • Combine dry ingredients in coffee mug.
  • Add egg, milk, lemon juice, oil & vanilla to cup - mix well.
  • Add any optional ingredients, if desired.
  • Place the coffee mug in the microwave and cook on high for 3 minutes.
  • As it cooks, the cake will rise above the cup but shouldn't make a mess (larger cups ensure this).

4 tablespoons unsalted butter
1 ounce bittersweet chocolate, chopped, plus 1 ounce broken into 4 equal pieces
1/4 cup sugar (1 3/4-ounces)
2 large eggs
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour (1 1/4-ounces)
1/2 teaspoon baking powder
2 tablespoons unsalted butter
1/2 ounce bittersweet chocolate, chopped, plus 1 ounce broken into 4 equal pieces
2 tablespoons sugar
1 large egg
1 tablespoon unsweetened cocoa powder
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons all-purpose flour
1/4 teaspoon baking powder

Steps:

  • Microwave butter and chopped chocolate in large bowl, stirring often, until melted, about 1 minute. Whisk sugar, eggs, cocoa, vanilla, and salt into chocolate mixture until smooth. In separate bowl, combine flour and baking powder. Whisk flour mixture into chocolate mixture until combined. Divide batter evenly between 2 (11-ounce) coffee mugs. Place mugs on opposite sides of microwave turntable. Microwave at 50 percent power for 45 seconds. Stir batter and microwave at 50 percent power for 45 seconds (batter will rise to just below rim of mug). Press 2 chocolate pieces into center of each cake until chocolate is flush with top of cake. Microwave at 50 percent power for 35 seconds (cake should be slightly wet around edges of mug and somewhat drier toward center). Let cakes rest for 2 minutes. Serve.
