2 1/2 lbs fresh carrots, whole and peeled
1/2 cup mayonnaise
1 tablespoon minced white onion
1 tablespoon prepared horseradish
1/4 cup saltine crackers, finely crushed
2 tablespoons butter

Steps:

  • Cook whole carrots in salted water until tender, saving 1/4 cup cooking liquid.
  • Cut lengthwise in narrow strips.
  • Arrange in 9 x 9 baking dish.
  • Set aside.
  • Combine reserved carrot liquid with mayonnaise, onion, horseradish, salt and pepper.
  • To serve, pour sauce over carrots.
  • Sprinkle cracker crumbs on top.
  • Dot with butter.
  • Sprinkle with parsley and paprika.

2 bunch carrots
1/2 c cooking liquid
1/2 c mayonnaise
1 tsp onion, finely chopped
1 Tbsp horseradish
salt and pepper
1/4 c breadcrumbs, seasoned
2 Tbsp butter
paprika & parsley

Steps:

  • 1. Cook carrots. Drain & save the liquid. Cut in to 1/4" lengthwise pieces. Place in a buttered 9 x 13 pyrex dish.
  • 2. Mix sauce ingredients and pour over carrrots: Cooking liquid, mayonaise, onion & horseradish
  • 3. Sprinkle the seasoned breadcrumbs over the carrots. Cut butter in small pieces and place on top. Season with Paprika & Parsley.
  • 4. Bake at 375, uncovered for 20 min till hot.

2 lb carrots
1/4 c chicken or vegetable broth
3/4 c mayonnaise
1 Tbsp horseradish
1 Tbsp minced onion
2 Tbsp butter
1/4 c plain bread crumbs
chopped parsley - optional
paprika

Steps:

  • 1. Peel and cut carrots into small strips. Cook in boiling water until tender. Do not over cook. Arrange the carrots in a baking dish that has been sprayed with cooking oil.
  • 2. Combine broth with mayo, onion, horseradish, salt and pepper. Pour over the carrots. Sprinkle with paprika and parsley. Bake at 375 for 20 minutes. Enjoy
