Nonstick cooking spray, for greasing the baking dish
6 large russet potatoes
Pinch salt
8 ounces sliced bacon
1 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup (1/2 stick) unsalted butter
Pinch garlic salt
Pinch freshly ground black pepper
2 cups grated Cheddar

Steps:

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.

6 large russet potatoes, sliced into 1/4 inch slices
1 small onion, finely chopped
1 pound cooked ham, chopped
1 (16 ounce) package frozen cauliflower
¼ cup crushed cornflakes cereal

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.

7 medium potatoes, peeled and chunked
8 slices bacon
1 cup sour cream
1/2 cup chopped onion
3 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • Boil potatoes until cooked.
  • While potatoes are boiling, fry bacon.
  • Chop fried bacon.
  • Drain potatoes and place in a large mixing bowl.
  • Add all other ingredients.

6 large potatoes
1/4 cup butter
1 (10 3/4 ounce) can cream of chicken soup
1/3 cup green onion, chopped
1 pint sour cream
1 1/2 cups shredded cheddar cheese
1 cup crushed corn flakes
2 tablespoons butter

Steps:

  • Preheat oven to 350.
  • Butter 2.5 quart casserole dish and set aside.
  • Bring 6 quarts of water to boil.
  • Peel the potatoes, rinse them, then slip them into the boiling water. Cook them until they are easily pierced with a fork (around 15 minutes). Drain, return to pot and immediately mash with hand-masher or beater.
  • While potatoes are cooking, melt 1/4 cup butter in a saucepan over medium heat. Once melted, stir in the can of soup. Remove the pan from heat.
  • Blend into soup mixture: sour cream, onion (reserve a few for garnish) and the shredded cheddar.
  • Stir this soup mixture into the mashed potatoes.
  • Pour it all into buttered 2.5 quart casserole.
  • Mix cornflakes with melted 2 T. butter. Sprinkle on top of potatoes.
  • Bake 45 minutes at 350.
  • Sprinkle with reserved chopped green onions before serving.
