HEALTHIER BANANA BANANA BREAD

Healthier Banana Banana Bread image

This recipe was really yummy to start with but I was looking for something a little healthier so I replaced some butter with non-fat yogurt and I eliminated the salt. It is super moist and tastes great.

Time 1h20m

Yield 12

Number Of Ingredients 8

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
¼ cup butter
⅛ cup nonfat plain yogurt
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a large bowl. Beat butter, yogurt, and brown sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Stir in mashed bananas until well blended. Pour banana mixture to flour mixture; stir just to moisten. Transfer batter into prepared loaf pan.
  • Bake in preheated oven until a toothpick inserted into center of loaf comes out clean, 60 to 65 minutes. Let bread cool in pan for 10 minutes, then turn out onto wire rack to cool completely.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with dark yellow skin and brown spots.
  • Don't overmix the batter: Overmixing will develop the gluten in the flour, making the bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan with a nonstick coating: This will help the bread to come out of the pan easily without sticking.
  • Let the bread cool completely before slicing: This will allow the bread to set and firm up, making it easier to slice and serve.

Conclusion:

Toni's banana bread is a classic recipe that is easy to make and always a crowd-pleaser. With its moist, flavorful crumb and sweet banana flavor, it's the perfect snack or breakfast treat. Whether you're looking for a simple recipe for everyday baking or a special treat for a special occasion, Toni's banana bread is sure to be a hit.
