Steps:
- Preheat oven to 350 degrees. Peel and cut butternut squash into 1-inch cubes. Drizzle 1 tablespoon vegetable oil over the butternut squash and stir to coat it well. Bake for about 30 minutes or until the butternut squash is fork-tender. Do not let the squash brown.
- In a large stockpot, add 1 tablespoon vegetable oil and saute onions until they are translucent. Sprinkle a little salt over the onions as you saute them. By salting the onions you will pull moisture out of the onions and the onions will cook more quickly.
- When the onions are translucent add pumpkin, butternut squash, vegetable stock, curry powder, and cinnamon, apple juice, and honey. Heat through. When the soup is hot, use an immersion blender to make the soup smooth. You can use a blender to make the soup if desired. Add cream to the soup, and stir the cream.
- Toast the pumpkin seeds in a small skillet. Heat through until they become fragrant. Remove from heat immediately.

Tips:
- Choose flavorful squash: For the best flavor, choose a mature squash that is heavy for its size. Look for squash with a deep orange or yellow color.
- Roast the squash before pureeing: Roasting the squash brings out its natural sweetness and gives the soup a richer flavor. Be sure to roast the squash until it is tender and slightly caramelized.
- Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
- Add some cream or milk for a richer flavor: If you like, you can add some cream or milk to the soup for a richer flavor. However, this is optional, and the soup will still be delicious without it.
- Season to taste: Be sure to season the soup to taste with salt, pepper, and other spices. You may also want to add a squeeze of lemon juice or a dollop of yogurt for a bit of tang.
Conclusion:
This autumn squash soup is a delicious and easy-to-make soup that is perfect for a fall day. It is packed with flavor and is sure to please everyone at your table. Plus, it's a great way to use up leftover squash. So next time you have some extra squash on hand, be sure to give this recipe a try. You won't be disappointed!
