Time 12h45m

Yield 4 serving(s)

Number Of Ingredients 7

6 ounces chocolate
5 eggs
8 ounces caster sugar
3 -4 tablespoons water
1 cup double cream or 1 cup whipping cream
3 drops rum extract (should say essence and not extract, this is an estimate, add to taste) or 3 drops brandy, essence (this is an estimate, add to taste)
icing sugar, for dusting

Steps:

  • Line a 12" x 8" swiss roll tin with oiled greaseproof paper or brush a paper case with oil or melted shortening (instructions for making a paper case will follow).
  • Preheat oven to 350°F.
  • Separate the eggs.
  • Beat yolks and add sugar gradually until mixture is lemon coloured.
  • Melt chocolate in the water using a double boiler.
  • When the chocolate is a thick cream, remove from heat.
  • Whip the egg whites until they form a firm snow.
  • Add chocolate to egg yolk mixture.
  • Gently cut and fold the egg whites into the mixture and turn it into the prepared tin or case.
  • Bake in preheated oven for 10 to 15 minutes or until firm when touched.
  • Wet a clean cloth in cold water and wring out.
  • Remove roulade from oven, allow to cool slightly, then cover with cloth (this will prevent any sugary crust from forming).
  • Leave in a cool place for 12 hours or in a fridge overnight.
  • Whip the cream and flavour to taste with the essence.
  • Lay a piece of greaseproof paper on a flat surface.
  • Dust well with icing sugar.
  • Remove cloth and turn roulade upside down on the prepared paper.
  • Carefully remove paper from roulade.
  • Spread with the whipped cream.
  • Roll up like a swiss roll.
  • Place on a serving dish and dust well with icing sugar.
  • How to make a roulade case:.
  • Use thick greaseproof paper or nonstick kitchen paper.
  • It should be 1 1/2 inches longer and wider than the pan you are using.
  • Fold a 1 1/2 inch border on all 4 sides.
  • Cut a slit at each corner and fold one cut piece over the other to miter the corners.
  • Use paperclips to secure the corners.
  • Slide the case onto a baking sheet.
  • Lightly brush with oil, melted butter or melted shortening before use.

TURKEY CORDON BLEU STUFFED WITH HAM, ROASTED GREEN CHILES AND BRIE

Turkey Cordon Bleu Stuffed with Ham, Roasted Green Chiles and Brie image

Provided by Guy Fieri

Categories     main-dish

Time 1h35m

Yield 10 to 12 servings

Number Of Ingredients 10

6 poblano chiles
1 pound Brie cheese, skin on, sliced into thin planks
1 1/2 cups grated Monterey Jack cheese
Three 2-pound turkey breasts, boneless
Kosher salt and freshly ground black pepper
Vegetable oil
15 thin slices cooked deli ham
Honey Mustard Sauce, recipe follows, optional
2/3 cups honey
1/2 cup Dijon mustard

Steps:

  • For the chile stuffing: Preheat a grill to high heat (you can also use a broiler if you don't have a grill). Place the whole chiles on the grill and cook until well charred and blistered, turning every 2 to 3 minutes. Transfer to a heatproof bowl and cover with plastic wrap so they "sweat," making them easier to peel. Let the chiles stand for 5 minutes before uncovering and using towels to rub off the skins. Discard the skins, remove the cores and seeds and finely chop the chiles. Transfer to a large mixing bowl and season with salt and pepper. Add the cheeses and stir together to form a stuffing. Set aside until ready to use.
  • For the turkey cordon bleu: Make a horizontal cut down the length of the thin side of each turkey breast using a sharp thin knife. Open the breasts up like a book so the cut-sides are exposed facing up and the skin-side is down, with the "spine" of the chicken horizontal on your work surface. Sprinkle the turkey with salt and pepper.
  • Lay 5 slices of the deli ham on each breast and trim the edges so the ham fits inside the breast and there is a small border around the turkey. Leaving this gap will ensure that when the turkey is rolled up it forms a nice seal and the stuffing doesn't ooze out everywhere. Divide the poblano-cheese stuffing in thirds and spread on each of the breasts evenly, leaving a small border around the edge. Starting from one side, tightly roll up the turkey away from you, stuffing in any of the filling as it tries to escape at the edges (it is important you roll it up this way, so when you make the slices in the finished roulade they are across the grain). Secure the roll with pieces of butchers twine every 2 inches to form a tight, even log. Repeat with the remaining breasts. Sprinkle the outsides with salt and pepper.
  • Preheat the oven to 375 degrees F. Heat oil in a turkey roaster set across two burners on medium-high heat. Add the roulades and brown evenly, 3 to 4 minutes per side. When browned all over, transfer the whole pan of the roulades to the oven and finish cooking. Roast until the internal temperature reaches 160 degrees F, 30 to 35 minutes.
  • Transfer to a platter and allow the meat to rest to allow for carry-over cooking and the internal temperature to reach 170 degrees F, 10 to 12 minutes. To serve, remove the twine and cut into 1/2-inch-thick slices. Drizzle the pan juices over the top.
  • Combine the honey and mustard and mix well.

CHOCOLATE ROULADE

Chocolate Roulade image

Freshly brewed coffee gives this dessert a subtle mocha flavor, but water can be substituted. The cake will crack slightly, but not break, as you roll it.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 7

7 ounces semisweet chocolate, chopped (about 1 cup)
1/4 cup plus 1 tablespoon brewed coffee (or water)
7 large eggs, separated
1 cup granulated sugar
Unsweetened Dutch-process cocoa powder, for dusting
1 cup heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Line a 13-by-17-inch rimmed baking sheet with parchment paper. Melt chocolate with coffee or water in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Let cool completely. Whisk together yolks and granulated sugar with a mixer on medium speed until pale and thick, about 3 minutes. Reduce speed to low, and slowly add chocolate mixture, whisking until incorporated.
  • Whisk whites in a medium bowl until soft peaks form. Gently fold whites into chocolate mixture, using a rubber spatula, until combined, being careful not to deflate whites.
  • Spread batter evenly on lined baking sheet. Bake until cake is cooked through, about 20 minutes. Transfer sheet to a wire rack, and let cool slightly, about 10 minutes.
  • Loosen edges of cake from pan using a knife or an offset spatula. Dust top with cocoa powder, and turn out onto wire rack. Remove parchment, and let cool at least 1 hour. Beat cream and confectioners' sugar until soft peaks form. Spread evenly over top of cake, leaving a 1-inch border around the edges, and tightly roll, starting at 1 short side. Transfer to a baking sheet, and refrigerate for at least 1 hour or overnight. Lightly dust cake with cocoa powder.

ORIGINAL CHICKEN CORDON BLEU

Original Chicken Cordon Bleu image

This classic French chicken dish, adapted from Jane and Michael Stern's book "American Gourmet," more than lives up to its name ("cordon bleu" means "blue ribbon"). It's also far easier to make than you may think. A chicken breast is pounded thin (we've been known to cheat by using pretrimmed cutlets), then wrapped around a slice of smoked ham and a bit of Swiss cheese, and secured with toothpicks. The roulade is coated in egg and bread crumbs, then pan-fried until golden brown, and a simple white wine cream sauce finishes it off.

Provided by Molly O'Neill

Categories     dinner, main course

Time 45m

Yield 4 servings

Number Of Ingredients 11

4 large boneless and skinless chicken breast halves (about 1 1/2 pounds)
4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg, beaten
3/4 cup fresh bread crumbs
1/4 cup unsalted butter
3/4 cup plus 2 tablespoons chicken stock
3/4 cup white wine, heavy cream or additional chicken stock

Steps:

  • Lay the chicken breasts between pieces of wax paper and use a mallet to pound them to 1/4 inch to 1/8 inch thick. Take care not to pound holes in the chicken. Layer each breast with the ham, then place a finger of cheese in the center. Roll up to completely enclose the ham and cheese and secure with toothpicks.
  • In a medium bowl, combine the flour, salt and pepper. Lightly dredge the chicken in the seasoned flour, then dip in the egg and coat with bread crumbs. Place on a baking sheet and chill at least 15 minutes and up to 4 hours.
  • In a large skillet over medium heat, heat the butter. Add the chicken and cook, turning carefully with tongs, until browned, about 8 to 10 minutes. Add 1/2 cup of the stock to the skillet, reduce the heat to medium-low, cover and simmer until the chicken is cooked through, 10 to 15 minutes. Move the chicken to a warm platter.
  • Add the remaining 2 tablespoons of stock to the skillet, raise the heat to high, and cook, stirring up browned bits clinging to the bottom, for 1 minute. Add the wine (or heavy cream or additional stock), lower the heat and simmer, uncovered, until the consistency of gravy, about 45 seconds. Pour over the chicken breasts and serve.

CHOCOLATE ROULADE

Chocolate roulade image

Make our next level chocolate roulade, with a spectacular chocolate meringue encasing a chocolate and cream filling and caramel sauce

Provided by Barney Desmazery

Categories     Dessert

Time 55m

Number Of Ingredients 12

vegetable oil, for the tin
5 egg whites
1 tsp lemon juice
225g caster sugar
60g cocoa powder, plus extra for dusting
1 tsp cornflour
100g dark chocolate, plus extra to serve
100ml double cream
150ml double cream
25g caster sugar
100g caramel sauce (from a can or jar), stirred until smooth
pinch of sea salt flakes

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil the base and sides of a 23 x 32cm baking tray and line with baking parchment. Beat the egg whites, lemon juice and a pinch of salt together using a stand mixer or electric whisk until very stiff. Add 1 tbsp of the sugar and beat to stiff peaks, then add the rest of the sugar, a spoonful at a time, until the mixture is thick and shiny. Sift over the cocoa and cornflour, then gently fold these in with a spatula until completely combined. Spread the mixture evenly into the prepared tin, then bake for 14-15 mins until just crisp to the touch. Leave to cool completely in the tin.
  • Meanwhile, make the fillings. For the chocolate filling, tip the chocolate and cream into a heatproof bowl set over a pan of simmering water and stir until the chocolate has melted and the mixture is shiny and smooth. Remove from the heat and leave to cool to room temperature. For the cream filling, whisk the cream and sugar together to stiff peaks using an electric whisk.
  • Dust a large sheet of baking parchment with cocoa powder, then carefully flip the meringue onto it. Remove the tin and carefully peel away the parchment. With a short end facing you, score a line across the meringue, 2cm in from the edge. Spread over the chocolate filling followed by the cream, then drizzle with most of the caramel sauce. Sprinkle over the sea salt flakes and drag a palette or cutlery knife through the fillings to gently swirl them. Roll up the roulade into a tight log, starting at the scored end and using the parchment underneath to help you. Lift onto a platter or board. Will keep chilled for up to a day. Drizzle over the remaining caramel sauce, then finely grate over more chocolate to serve.

  • While the sheet cake is still warm, gently roll, starting from one short side, into a log, incorporating the kitchen towel. Let the cake cool completely, rolled. (This will give the cake a "shape memory," so it will be easier to roll again with filling.)
  • Meanwhile, make rum syrup: In a small saucepan, combine the water and ¼ cup sugar. Bring to a boil; reduce heat and simmer until sugar has dissolved, about 3 minutes. Remove from heat; add rum, then let cool completely.
  • Fill cake and reroll: Unroll cake. Brush entire surface with cooled rum syrup. Whip cream and remaining sugar until soft peaks form; spread over cake leaving a 1/2-inch border all around. Roll cake to enclose filling (without towel) starting at a short end. Wrap the towel around rolled cake, securing with clips or clothespins to help retain the shape.
  • Chill and serve: Refrigerate 30 minutes (or up to 3 hours). Dust with cocoa powder, cut into slices with a serrated knife, and serve.

CHICKEN CORDON BLEU CASSEROLE

Chicken Cordon Bleu Casserole image

I love making casseroles, and this one's so simple. The chicken breasts, Swiss cheese, and ham are cubed, rather than stuffed and rolled, giving you all the flavor of Cordon Bleu in much less time.

Yield 5 servings

Number Of Ingredients 10

4 boneless, skinless chicken breasts
1 salt, to taste
1 pepper, to taste
1 tablespoon garlic powder
1 tablespoon onion powder
16 slices swiss cheese
½ lb ham, sliced
2 sheets puff pastry, thawed if frozen
¼ cup english mustard
1 egg, beaten

Steps:

  • Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
  • On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½-inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  • Remove the plastic wrap and place a layer of Swiss cheese, then ham, then one more layer of Swiss cheese.
  • Evenly roll the chicken, and place onto a new sheet of plastic wrap.
  • Wrap the chicken in the plastic wrap, twist the excess plastic, and roll the chicken while twisting the sides in to tighten and firm up the roll of chicken cordon bleu. Tie the excess and chill in the fridge to set for 30 minutes.
  • Preheat oven to 400°F (200°C).
  • Cut the puff pastry sheets in half and gently roll out width-wise.
  • Brush the pastry with mustard and place the chicken on to the bottom edge of the pastry.
  • Tightly roll the chicken in the puff pastry, pinching the seams together to close and folding the sides under the bottom.
  • Place the chickens rolls on a greased baking sheet and brush all sides with egg wash.
  • With a fork, score a decorative design onto the surface of the puff pastry.
  • Sprinkle with salt.
  • Bake for 35-40 minutes or until the puff pastry is a dark golden brown and the internal temperature of the chicken is 165°F (75°C).
  • Enjoy!

Tips:

  • To make sure your chocolate roulade turns out perfectly, use high-quality chocolate. A good semisweet or bittersweet chocolate will give you the best flavor.
  • Make sure your eggs are at room temperature before you start baking. This will help them emulsify better with the butter and sugar, resulting in a smoother batter.
  • Don't overbeat the egg whites. You want them to be stiff but not dry. If you overbeat them, they will become grainy and the roulade will be tough.
  • When you are spreading the batter onto the parchment paper, make sure to do it evenly. This will help the roulade bake evenly.
  • When you are rolling the roulade, do it tightly. This will help to prevent the filling from leaking out.
  • If you are having trouble rolling the roulade, you can chill it for a few minutes before you try again. This will make it easier to handle.
  • Once the roulade is rolled, chill it for at least 30 minutes before you slice and serve it. This will help it to set and make it easier to cut.

Conclusion:

The chocolate roulade is a delicious and elegant dessert that is perfect for any occasion. With its rich chocolate flavor and creamy filling, it is sure to be a hit with everyone who tries it. Follow these tips to make sure your chocolate roulade turns out perfectly every time.
