CORN SALAD WITH TOMATOES, FETA AND MINT

Corn Salad With Tomatoes, Feta and Mint image

Fresh raw corn shucked from the cob is ideal here. The juice from the tomatoes delivers just the right amount of acidity, so there's no need for vinegar. Eat this as is, by the bowl, or toss it with cooked rice or beans for a more filling meal - you'll want to add oil and vinegar accordingly. In midsummer, with peak-season produce, there is nothing better.

Tips:

  • Use fresh, sweet corn for the best flavor. If using frozen corn, thaw it completely before using.
  • Don't overcook the corn. It should be tender but still have a slight crunch.
  • Use a variety of colors of bell peppers for a more vibrant salad.
  • Add other vegetables to your salad, such as cucumbers, tomatoes, or onions.
  • Use a good quality feta cheese. A firm, creamy feta will hold its shape better in the salad.
  • Toast the walnuts for a richer flavor.
  • Add a squeeze of lemon juice to brighten up the flavors.
  • Serve the salad immediately or chill it for later.
