BLACK-EYED PEA CORNBREAD
My mother-in-law passed down this very old recipe to my wife. The first time she made it, I was completely surprised. I had never heard of it, and I've been unable to find anything else quite like it. You can fix this as a side dish to a meal, or make it into muffins for snacks. Either way, you'll be pleasantly surprised.

BLACK EYED PEA CORNBREAD
This is apparently a recipe they make at the Black Eyed Pea restaurant (EDIT: apparently not the Black Eyed Pea Restaurant cornbread - thanks Kelly - but still yummy), but I tried it out at home and it was delicious. Rather filling, it's maybe a little too much for a side, but it's very good. Try it out! I've also just remembered that I actually used a couple of red chilli peppers, rather than jalapeno peppers, which gave it a bit more kick. So it's up to you which you use :)

Tips:
- Choose the Right Type of Cornmeal: Use a coarse or medium-grind cornmeal for a more rustic texture, or a fine-grind cornmeal for a smoother texture.
- Season Your Cornbread: Add some herbs, spices, or cheese to your cornbread batter for extra flavor. Popular options include chili powder, cumin, paprika, garlic powder, onion powder, and grated cheddar cheese.
- Use Fresh Black-Eyed Peas: For the best flavor, use fresh black-eyed peas. If you don't have fresh black-eyed peas, you can use canned or dried black-eyed peas, but be sure to rinse and soak them before using.
- Cook the Black-Eyed Peas Until Tender: Make sure to cook the black-eyed peas until they are tender but still hold their shape. Overcooked black-eyed peas will become mushy.
- Don't Overmix the Batter: Overmixing the batter will result in a tough cornbread. Stir just until the ingredients are combined.
- Bake the Cornbread in a Hot Oven: Preheat your oven to the temperature specified in the recipe before baking the cornbread. This will help to create a crispy crust.
- Let the Cornbread Cool Before Serving: Allow the cornbread to cool for at least 10 minutes before serving. This will help to prevent it from crumbling.
Conclusion:
Cornbread with black-eyed peas is a classic Southern dish that is easy to make and always a crowd-pleaser. With its slightly sweet and savory flavor, cornbread is the perfect accompaniment to a variety of dishes, from chili and soup to fried chicken and barbecue. Black-eyed peas add a boost of protein and fiber, making this dish a complete meal. Whether you're a Southerner or just a fan of good food, cornbread with black-eyed peas is a dish that you'll love.
