Corned Beef & Macaroni Casserole Recipe - (4.3/5) image

Provided by wandab0811

Number Of Ingredients 11

2 cups elbow macaroni cooked and drained
2 (12-ounce) cans corned beef
1 teaspoon salt
1 teaspoon pepper
1 small onion, chopped
6 tablespoons unsalted butter
3 cups milk
6 tablespoons flour
1 1/2 tubes of Ritz crackers, crushed
3 cups Velveeta cheese, shredded
1 teaspoon cayenne pepper, optional

Steps:

  • Preheat oven to 375°F WHITE SAUCE: In a small, heavy saucepan, melt 6 tablespoons of butter over low heat. Blend 6 tablespoons of flour into the melted butter. Add 3/4 teaspoon of salt. Cook over low heat, stirring, for 3 to 4 minutes. Cooking for this length of time will minimize 'flour' taste. Slowly add 3 cups of milk, stirring constantly and continue cooking slowly until smooth and thickened. Add the 3 cups of Velveeta Cheese and stir until melted and smooth. CASSEROLE: Take a 2 1/2 quart casserole dish and spray it with cooking spray then add 1/2 of the macaroni. Crumble 1 can of corned beef over macaroni and sprinkle 1/2 of the onion on top of that along with 1/8 teaspoon of salt and 1/2 teaspoon of pepper.. Now make another layer of macaroni and place the 2nd can of corned beef and the rest of the onion on top as before. Sprinkle the last 1/8 teaspoon of salt and the 1/2 teaspoon of pepper. Now pour the white sauce over casserole and poke holes through casserole with a knife so that the sauce permeates the casserole. Add cayenne pepper at this time if desired and top with the crumbled crackers. Place in the preheated oven for 30 minutes to complete dish.

MACARONI AND CORN SALAD

Macaroni and Corn Salad image

This Macaroni and Corn Salad uses puréed fresh corn to make a lighter dressing than mayonnaise for this updated take on a classic.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 12

1/2 pound elbow macaroni
1 pound asparagus
4 ears fresh corn, kernels cut off cobs
1 tablespoon fresh lemon juice
2 tablespoons red-wine vinegar
1 tablespoon Dijon mustard
1 teaspoon sugar
Salt and freshly ground pepper
1/2 cup vegetable oil
2 scallions, cut into 1-inch pieces
1/2 cup fresh chervil leaves
1/4 cup capers, drained and rinsed

Steps:

  • Cook macaroni in salted water until al dente. Drain, rinse, and oil lightly, and set aside. Cut tips off asparagus at an angle. Cut remaining tender part of asparagus into same-size pieces; blanch and drain. Plunge into ice water. Drain again and set aside.
  • Cook corn in salted water until tender, about 5 minutes. Rinse to cool.
  • In a blender, combine 1 cup of the corn along with lemon juice, vinegar, mustard, sugar, and salt and pepper to taste; blend until smooth. Slowly blend in oil. Add scallions and 1/4 cup of the chervil leaves. Adjust seasonings.
  • Toss together macaroni, asparagus, remaining corn and chervil, capers, and the dressing.

Tips:

  • Choose the right corned beef. Look for a brisket that is at least 3 pounds and has a good amount of marbling. You can also use a flat cut of corned beef, but it will be less flavorful.
  • Cook the corned beef properly. The best way to cook corned beef is to braise it in a slow cooker or Dutch oven. This will help to tenderize the meat and make it fall apart easily.
  • Make the macaroni salad ahead of time. This will give the flavors time to meld together. You can also make the macaroni salad up to 3 days in advance.
  • Use a variety of vegetables in your macaroni salad. This will add flavor and texture. Some good vegetables to use include celery, onion, carrots, and peas.
  • Don't overdress the macaroni salad. Too much dressing will make the salad soggy. A good rule of thumb is to use about 1/2 cup of dressing for every pound of macaroni.

Conclusion:

Corned beef and macaroni salad is a classic dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. Whether you like your macaroni salad creamy or tangy, with or without vegetables, there is a recipe out there for you.
