SIMPLE COTTAGE CHEESE PANCAKES

These are an old favorite of mine. I use small-curd, low-fat cottage cheese. They come out thin and delicate, somewhere between a classic pancake and a crepe. A nice addition to a reduced-carb diet.

Time 30m

Yield 1 serving(s)

Number Of Ingredients 8

1/3 cup old-fashioned oatmeal
1/4 cup blueberries
3 tablespoons egg whites
1 tablespoon nonfat milk
1 tablespoon fat-free cottage cheese
1 tablespoon flour
2 tablespoons water
1 pinch salt

Steps:

  • Combine all ingredients except for the blueberries and stir until well mixed. Gently fold in blueberries.
  • In a skillet sprayed with nonstick spray, drop batter into pan to form 3 pancakes (or 1 big pancake). Once pancakes begin to look solid (about 3 minutes), gently flip (if possible, re-spritz the pan with nonstick spray as you flip 'em to prevent sticking). Cook for approximately 3 additional minutes, or until both sides are lightly browned and insides are cooked through.

Tips:

- Use fresh blueberries for the best flavor. If using frozen blueberries, thaw them before using. - To make the pancakes extra fluffy, let the batter rest for 5-10 minutes before cooking. - Cook the pancakes over medium-low heat to prevent them from burning. - Serve the pancakes with your favorite toppings, such as butter, syrup, or fresh fruit.

Conclusion:

Cottage cheese blueberry pancakes are a delicious and easy-to-make breakfast recipe. They are perfect for a weekend brunch or a special occasion. With their fluffy texture and sweet blueberry flavor, these pancakes are sure to be a hit with everyone at the table.
