1 cup Gold Medal™ all-purpose flour
3/4 cup sugar
3/4 cup fat-free (skim) milk
2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon butter, melted
2 bags (8 oz each) Cascadian Farm™ frozen organic blueberries
2 teaspoons finely chopped crystallized ginger, if desired

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, stir flour, sugar, milk, baking powder and salt until well blended. Stir in melted butter. Pour into baking dish.
  • Pour frozen blueberries over batter; sprinkle with ginger.
  • Bake uncovered 1 hour to 1 hour 5 minutes or until edges are golden brown and center is set. Let stand 15 minutes before serving. Serve warm.

4 cups blueberries or 1 (16 ounce) package frozen blueberries
2 tablespoons lemon juice
1/3 cup brown sugar, packed
2 teaspoons cornstarch
2/3 cup quick-cooking oats
1/2 cup all-purpose flour
1/3 cup brown sugar, packed
salt
1/3 cup butter or 1/3 cup margarine

Steps:

  • Toss blueberries with lemon juice in ungreased 1 1/2 quaart casserole.
  • Mix 1/3 cup brown sugar and the cornstarch; stir into blueberries.
  • Mix oats, flour, 1/3 cup brown sugar and a dash of salt; cut in butter with fork.
  • Sprinkle over blueberries. Bake uncovered in 350 degree oven until topping is light brown and blueberries are bubbly, about 40 minutes.
  • Serve warm with ice cream.
