8 ounces Velveeta cheese, (sliced into 1/2" thickness, 1/2 block)
4 cups milk (2% or higher)
1 teaspoon table salt
1 teaspoon dry mustard powder
2 cups macaroni (uncooked)
4 Tablespoons salted butter (sliced into 1/2"thickness)
2 cups shredded cheese

Steps:

  • Spray a 9x13 baking dish with nonstick cooking spray. oven to 350F degrees.
  • In the bottom of your baking dish (or a separate bowl), mix together milk with salt and dry mustard powder.
  • Pour in uncooked macaroni (spread it out.)
  • Then add slices of Velveeta and 1 cup shredded cheese into baking dish making sure to distribute it evenly.
  • Top with slices of butter (pushing them down a bit under the milk.)
  • Cover with aluminum foil and bake for about 50-60 minutes (until macaroni is cooked and most of the liquid has been absorbed). Oven times vary so check it around the 40 minute mark.
  • Take it out of the oven, remove foil, and top with another cup (or so) of shredded cheddar cheese.
  • Put it back in the oven (uncovered) for another 10-15 minutes (until cheese is melted.)

1 1/2 teaspoons salt, divided
2 cups sharp cheddar cheese, shredded

  • Boil noodles according to directions on package, adding at least 1 teaspoon of salt to water. Drain noodles and let cool.

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.

1 (28-ounce) can petite diced tomatoes
6 tablespoons unsalted butter
1/2 cup all-purpose flour
1/4 teaspoon cayenne pepper
4 cups half-and-half
1 cup low-sodium chicken broth
8 oz (3 cups) shredded mild cheddar cheese
8 oz (3 cups) shredded sharp cheddar cheese

Steps:

  • 1. COOK MACARONI Adjust oven to middle position and heat oven to 400 degrees. Bring 4 quarts water to boil in large Dutch oven over high heat. Stir in 1 tablespoon salt and macaroni and cook until just al dente, about 6 minutes. Drain pasta and return to pot. Pour diced tomatoes with their juices over pasta and stir to coat. 8 ounces macaroni ( or other medium tubular pasta (like penne or conchiglie)* (1/2 pound or about 1 and 3/4 cups))
3 tablespoons butter
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon smoked paprika ((plus more for sprinkling on top))
2 1/2 cups 2% milk
3 cups shredded medium cheddar cheese ((approx. 12 ounces) **)

Steps:

  • Boil the pasta JUST until al dente, according to package directions. Drain and return to the pan you boiled it in. Set aside. (Mix in a little butter to keep the noodles from sticking if it's going to be awhile before you make the sauce)
