1 lb bulk sausage
1 1/2 cups milk
12 ounces cheddar cheese (cut into cubes)
1/4 cup Dijon mustard
1 cup diced canned tomato (drained)
1 cup mushroom, sliced
1/3 cup green onion, sliced
1/8 teaspoon cayenne pepper
12 ounces elbow macaroni, uncooked
3 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 350°.
  • In medium skillet, crumble and cook the sausage; drain on paper towels.
  • In medium saucepan, combine milk, cheese and mustard; cook and stir over low heat until the cheese melts and the mixture is smooth.
  • Stir in sausage, tomatoes,mushrooms, onions and cayenne pepper; remove from heat.
  • Cook elbow macaroni and drain.
  • In large bowl, combine macaroni and the cheese mixture;gently toss until well coated.
  • Spoon into greased 2-quart casserole dish.
  • Cover and bake 15-18 minutes.
  • Remove from oven, sprinkle with Parmesan cheese; return to oven, uncovered, for 5 minutes more.
  • Let stand 10 minutes before serving.

8 slices bread, cubed
2 cups American cheese, grated (Schreiber's white American is the creamiest)
2 lbs maple sausage (bulk, not links)
4 eggs, beaten
2 1/2 cups milk
3/4 teaspoon dry mustard
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/2 cup milk

Steps:

  • Place bread cubes in a greased 9x13-inch pan.
  • Sprinkle with cheese.
  • Scatter browned sausage evenly over top.
  • Blend eggs, 2 1/2 cups milk and mustard and pour over ingredients in the pan.
  • Refrigerate overnight (or for 5 hours).
  • Blend soup and 1/2 cup milk and pour evenly over the top.
  • Bake 1 1/2 hours at 350°F.

1/2 lb spicy sausages, sliced 1/2 in. thick (pork or beef)
3 Tbsp olive oil
3 medium sized tomatoes, peeled, halved, seeded & grated
8 red & green peppers, seeded & cut into 1/2 in. strips (jullienne)
2 medium size onions, sliced in rings
2 clove garlic, minced
1/8 tsp sugar
parsley for garnish

Steps:

  • 1. Slowly saute the peppers in 2 Tbsp olive oil, until they brown slightly. Add the onion & garlic and saute for 5 minutes longer. Add the tomatoes & season with very little salt, pepper & sugar. Simmer for 20 to 25 minutes or until sauce thickens.
  • 2. In another pan lightly saute the sausages, in the remaining oil. If you prefer you can grill the sausage or even BBQ. Add them to the peppers -tomato sauce and simmer together for 5 more minutes. Garnish with chopped parsley. Serve hot with a rice pilaf and a glass or two of wine:)

10 Large Eggs
3 cups Milk
1 tsp Ground mustard,
Kosher salt &
ground black

1/2lb Sliced bacon
1/2 lb. Breakfast sausage
patties, crumbled
As needed Non-stick cooking

7 slices White bread cut in
to 1-1/2" cubes
2 cups Fancy shredded
Cheddar cheese.
1/2 cup Green pepper,
medium, diced
1/2 cup Red pepper, medium
diced.
1/2 cup Scallions, sliced
thin

Steps:

  • 1.Preheat oven to 325deg. 2. In a medium bowl, whisk together eggs, milk, ground mustard and salt and pepper to taste; set aside. 3. Cook bacon in a large saute pan until crisp; drain. Cut into 1" pieces and set aside. 4.Cook crubled sausage in a large saute pan over medium heat until cooked though; drain and set aside. 5. Generously spray a 9x13" baking dish witb cooking spray. 6. Layer half of the bread cubes, bacon, sausage, cheese, peppers and scallions into the baking dish; repeat layers with remaining ingredients. 7. Pour the egg mixture into the baking dish; stir to evenly distribute the mixture. 8. Bake until the center of the casserole is set, about 1 hour. 9.Remove from oven, and let rest for 10 minutes before cutting. Cut into squares and serve.
