1/2 onion, chopped
2 garlic cloves, minced
1/2 tsp. chili powder
1/2 tsp. cumin
2 c. frozen corn, defrosted
2 c. canned diced tomatoes
1/3 c. sour cream
1 1/2 c. cheese, divided
kosher salt
Freshly ground black pepper
2 bags (16 oz) frozen tater tots
1 tbsp. Chopped parsley, for garnish

Steps:

  • Preheat oven to 375°. In a large skillet over medium heat, heat oil. Add onions and cook until soft and slightly translucent. Next, add beef. When it is no longer pink, drain some of the fat and push meat and onions to outer edge of skillet. Add, garlic, chili powder and cumin. Stir and cook until garlic is fragrant, about 2 minutes.
  • Add corn, tomatoes, sour cream and 1 cup cheese. Cook, stirring regularly, until cheese is melted and sour cream is incorporated. Season with salt and pepper.
  • Pour mixture into a 9x13 baking dish. Top with tater tots and sprinkle with remaining cheese. Bake 20-25 minutes, or until cheese is melted and tater tots are golden. Garnish with parsley and serve.

2 pounds 80/20 ground beef
2 tablespoons chili powder
2 1/2 teaspoons ground cumin
1 tablespoon Kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1 yellow onion, finely diced
1 (14.5 ounce) can crushed tomatoes ((preferably fire-roasted))
1 1/2 cup low-sodium beef broth
1 cup corn
1 1/2 tablespoon cornstarch
1/4 cup sour cream
2 1/4 cup freshly grated Cheddar cheese
1 (32 ounce) package of frozen tater tots

Steps:

  • Preheat the oven to 375° and have ready a greased 9x13" casserole dish.
  • Add to ground beef, chili powder, cumin, salt, pepper, and garlic powder to a large sauté pan over medium-high heat. Break apart the meat, blending in the spices and cook for 8-10 minutes, stirring often.

1 1/2 cups frozen mixed vegetables
3 tablespoons flour
1 1/2 cups beef broth
1/2 cup milk
1 1/2 tablespoons Worcestershire sauce
3 cups grated cheddar cheese
32 ounces frozen tater tots

  • Preheat oven to 350°F.

1 small onion (diced)
20 ounces ground turkey (A pound of turkey or beef is fine.)
1 teaspoon chili powder
1 teaspoon hot sauce
1/2 teaspoon kosher salt
1 cup frozen corn ( (or 10 ounces can whole kernel corn drained))
15 ounces can pinto beans (drained)
1 cup BBQ sauce
1 cup shredded cheddar or Mexican blend cheese
28 ounces bag frozen tatertots

Steps:

  • Preheat oven to 400 degrees F. Spray a 9x13" baking dish with cooking spray, and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add onion, ground meat, chili powder, hot sauce, and salt. Stir and cook until meat is almost cooked through. Stir in corn and drained beans, and cook a couple more minutes until hot.
  • Pour meat mixture into the prepared baking dish. Drizzle BBQ sauce over the meat, and spread shredded cheese over that. Arrange tater tots in an even layer over the top of the cheese.
