1 medium onion, chopped
1/2 bell pepper, chopped
2 celery ribs, chopped
1/4 cup margarine
2 slices dry toast, crumbled
1/2 cup milk
1 egg, beaten
1 lb crabmeat
1/2 cup green onion, chopped
1/2 cup cracker crumb

Steps:

  • Preheat oven to 350°F.
  • Saute onion, bell pepper and celery in margarine for 10 minutes.
  • In mixing. bowl, add crumbled toast, milk and egg.
  • Mix well and add crab meat.
  • Add mixture to sauteed vegetables and mix well on low heat.
  • Add salt and pepper to taste.
  • Place in casserole dish.
  • Top with bread crumbs and green onions and dot with margarine.
  • Bake at 350F for 45 minutes.

6 ounces seasoned stuffing mix, instant, cornbread flavored
8 ounces crabmeat, imitation-fresh whichever you prefer
1 garlic clove, fresh, sliced paper thin
1 large onion, diced
1/3 cup celery, chopped
1 tablespoon dried parsley
1 dash paprika
1/2 teaspoon garlic powder
2 tablespoons butter
1/2 cup parmesan cheese
1 1/2 cups water, whatever is called for in the stuffing directions
1/4 cup margarine, whatever is called for in the stuffing directions
1 dash cooking spray

Steps:

  • Sauté garlic, onions, celery, and parsley. Set aside.
  • Shred the crab meat.
  • Prepare the stuffing mix as per instructions on the box but DO NOT COOK. In other words, just mix the water, butter, and stuffing mix together, without cooking it.
  • Stir into the crab meat, add garlic powder, and mix until blended.
  • Spoon into loaf pan treated with no-stick cooking spray (DO NOT PRESS).
  • Brush lightly with butter, sprinkle with paprika, and bake covered in a 375°F oven for 45 minutes.
  • Remove covering, add parmesan cheese, and continue to bake at 400°F for 10-15 minutes to allow the top to brown.
  • Serve as a side dish, the main dish, or a bed for Shrimp Scampi.

1 tablespoon Dijon mustard
1 tablespoon garlic granules
1 tablespoon dry white wine
1 teaspoon ground ginger
1/4 teaspoon salt
1 pinch sugar
1 lb fresh lump crabmeat
4 plum tomatoes, diced
1 cup seedless cucumber, diced
1/2 teaspoon Old Bay Seasoning
1/4 teaspoon white pepper
gourmet mixed greens
avocado, thinly sliced
purple onion rings, thinly sliced
mangoes or kiwi, sliced

Steps:

  • Whisk together all dressing ingredients, and chill.
  • Combine crabmeat and next 4 ingredients in a large bowl.
  • Toss with mayonnaise dressing mixture.
  • Serve with greens on serving platter.

I love crabmeat dressing more than anything, and I love baked flounder so here you go with my recipe from the 60's. Still my favorite.

4 flounders (small to med) if you can't get whole flounder, filets will work.you will need 8
PREPARE YOUR FISH
you want whole flounder,cleaned w/o head - put fish on cutting board top side up-cut down the middle from top to 2-inch from tail.you want to cut to the bone,remove bone, then peel back both sides of fish
CRABMEAT DRESSING
6 c fresh bread crumbs (not packaged)
1/2 c onion minced
1/2 c bell pepper chopped fine
1/2 c mayonnaise
1 1/2 tsp creole seasoning ( i use tony's)
1/2 tsp italian seasoning
1 lb lump crab meat or 4 cans white lump crabmeat
LEMON, GARLIC BUTTER SAUCE
1 1/2 stick butter (not margarine)
2 Tbsp olive oil, extra virgin
1 Tbsp minced garlic
1/4 tsp lemon zest, grated
3 Tbsp lemon juice

Steps:

  • 1. DRESSING:
  • 2. mix creole seasoning and italian seasoning with breadcrumbs,then add onion,bell pepper, and last mayonnaise.Then gently fold in crab meat being careful not to break up lumps of crab. meat.refrigerate I like to make my dressing the day before or the morning of my dinner,it gives the seasoning time to marry together.
  • 3. LEMON,GARLIC,BUTTER SAUCE:
  • 4. In small skillet, cook garlic in olive oil until tender (careful not to burn) add butter,creole seasoning,lemon juice and zest, simmer for 2 min.
  • 5. Put fish in prepared pan, fill with 1 cup crab meat,then lay sides up over the crab meat. cover fish with sauce.
  • 6. preheat oven to 400 degrees. Spray large sheet pan with cooking spray. cook flounder for 30 min.(or until flakey) spoon sauce over fish ever 10 min.When done place each fish on plate and pour sauce from baking dish over fish and serve
  • 7. If using filets, place one filet on baking pan cover with dressing, top with filet,spoon sauce over filets. cook as above.
  • 8. TIPS: If you use canned crab be sure to drain off the water in can and rainse the crab at least 3 times to get rid of the can smell and taste.
  • 9. In the dressing you can add small cooked shrimp or cooked crawfish tails, I love to change it around.
  • 10. I like to serve mine with a greek salad and hard greek rolls,or a twice baked potato, tossed spinch salad, and garlic bread.
  • 11. You can also make crab meat rolls,with thin filets, just place dressing on the filet and roll it up then bake with the sauce over it.
