I was given this recipe years ago when I lived in Colorado. It is a very simple but delicious salad. It always gets lots of compliments and completely disappears at potlucks.

CRAISIN' GREEN SALAD WITH PEARS

Craisin' Green Salad With Pears image

I developed this to go along with Recipe#379227. Remember that pears ripen from the inside out, the best way to check for ripeness is to "check the neck for ripeness". To do this, gently press near the stem with your thumb. When it gives to gentle pressure it is ripe, juicy and ready to eat. If you wait until the pear is soft around the middle chances are it will be overripe. I have also used Recipe#369334 instead of olive oil, and subbed in goat cheese or bleu cheese -all of them are good! Radicchio is bitter so be careful that you are using just a smidgeon of it. The cooking time is the resting time in the refrigerator.

CRAISIN CHICKEN SALAD

Craisin Chicken Salad image

I love chicken salad, mostly because it's so easy to do. This one is a nice change from the usual with the addition of craisins. The cream cheese makes it super creamy, but I leave it out sometimes and bump up the mayo instead.

CRAISIN CHICKEN SALAD

This is another very easy favorite.

Provided by Jill Cooks

Categories     Chicken Salads

Number Of Ingredients 5

1 cooked rotisserie chicken, cubed
3-4 celery ribs, diced
1 cup craisins, or more
1 jalapeno pepper, diced fine
mayonnaise, to taste

Steps:

  • 1. Chill for several hours.
  • 2. Serve on your favorite bread or crackers.

Here are some tips for making Craisins Salad:

  • Use fresh cranberries. If you can't find fresh cranberries, you can use thawed, unsweetened, and whole ones
  • Don't over-process the cranberries. You want them to be coarsely ground so they still have some texture.
  • Use a good-quality mayonnaise. The mayonnaise is the base of the Craisins Salad, so it's important to use a good one.
  • Don't be afraid to adjust the sweetness of the Craisins Salad. If you prefer a sweeter Craisins Salad, add more sugar or cranberries. If you prefer a tarter Craisins Salad, add more orange zest or celery.
  • Serve the Craisins Salad chilled. This will help the flavors set and give the cranberries a chance to firm up.

Conclusion:

The Craisins Salad is a simple and refreshing dish. It's perfect for a party or a pot luck. The sweetness of the cranberries is complemented by the fresh orange zest and crunchy celery. The result is a light and tangy relish that's sure to please everyone.
