Number Of Ingredients 6

1 lb baby carrots
1/2 cup water
1/4 cup jellied cranberry sauce
2 tablespoons light margarine or 1 tablespoon margarine
1/4 teaspoon cinnamon
1/2 teaspoon orange rind

Tips:

  • Choose fresh, firm carrots: Avoid limp or damaged carrots, as these will not roast well.
  • Peel and cut the carrots evenly: This will help them roast evenly.

  • Roast the carrots at a high temperature: This will help them brown and caramelize.
  • Don't overcrowd the pan: If you overcrowd the pan, the carrots will steam instead of roast.
  • Roast the carrots until they are tender-crisp: You don't want them to become mushy.
  • Serve the carrots immediately: Roasted carrots are best served hot out of the oven.
