1-1/2 cups chopped fresh or frozen cranberries
1/2 cup sugar
2 packages (3 ounces each) orange or lemon gelatin
1/4 teaspoon salt
2 cups boiling water
1-1/2 cups cold water
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 medium navel orange, peeled and diced
1/2 cup chopped almonds
Lettuce leaves

Steps:

  • In a small bowl, combine cranberries and sugar; set aside. In a large bowl, dissolve gelatin and salt in boiling water. Stir in the cold water, lemon juice, cinnamon and cloves. Cover and chill for 1 hour., Stir in the orange, almonds and cranberry mixture. Pour into a 6-cup ring mold coated with cooking spray. Cover and refrigerate for 3-4 hours or until set. Invert onto a lettuce-lined serving plate.

1 small package cherry Jello
1 cup boiling water

1 pkg cranberries - chopped *
1/2 c apples - chopped
2 c sugar (stir occasionally while fixing other parts of salad)
2 pkg lemon jell-o ... small size
1 pkg cherry jell-o ... small size
3 c hot water - boiling
1/2 c pineapple juice
1 c nuts, chopped
1 c crushed pineapple (8 oz.)
1 lb seedless grapes - cut up (i cut each grape in half then each half in about 6 pieces)

Steps:

  • 1. Mix these 3 items and let stand: 1 package Cranberries - chopped * ½ cup apples - chopped 2 cups sugar (stir occasionally while fixing other parts of salad)
  • 2. Mix and let cool down: 2 small pkg. Lemon Jell-O 1 small pkg. Cherry Jell-O 3 cups hot water - boiling ½ cup pineapple juice
  • 3. Mix cranberry mixture and Jell-O mixture together
  • 4. Add: 1 cup nuts, chopped 1 cup crushed pineapple (8 oz.) 1 lb seedless grapes - cut up
  • 5. Pour in 9x13 GLASS pan and place in refrigerator to chill.
  • 6. * Easiest way to chop cranberries is to freeze and then put frozen cranberries in food processor with chopping blade in bottom and chop very fine. (pulverize) Do a small amount at a time.

2 - 15oz can(s) jellied cranberry sauce
3 lg peeled apples, any variety, grated
1/2 pt heavy whipping cream
4 Tbsp powdered sugar
1 tsp vanilla extract
1/3 c chopped walnuts
fresh parsley as garnish, if desired
maraschino cherries as garnish, if desired

  • 1. Mix grated apples and cranberry sauce in large bowl and mix well. Place in 8x8 or 9x9 inch pan and put in refrigerator until set.
