1 cup finely chopped cranberries
1 cup white sugar
1 cup corn syrup (such as Karo®)
¼ teaspoon salt
½ cup heavy whipping cream
¼ cup butter

Steps:

  • Butter a 9x5-inch loaf pan.
  • Combine cranberries, sugar, corn syrup, and salt in a heavy, large saucepan; bring to a boil. Heat to 245 degrees F (118 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface, 20 to 30 minutes.

1 cup picked-over fresh or frozen cranberries
1 1/2 cups sugar
1/2 cup water

Steps:

  • In a food processor purée cranberries and transfer to a small bowl.
  • In a dry heavy saucepan cook sugar over moderate heat, stirring with a fork, until melted and cook, without stirring, swirling pan, until a golden caramel. Remove pan from heat and carefully add water and cranberry purée (caramel will steam and harden). Return pan to heat and simmer sauce, stirring, 10 minutes, or until caramel is dissolved. Pour sauce through a fine sieve into a heatproof bowl, pressing hard on solids, and cool completely. Sauce may be made 4 days ahead and chilled, covered. 1 cup chopped fresh cranberries
1 cup light corn syrup
1/2 cup heavy whipping cream

Steps:

  • Line an 8-in. square dish with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine sugar, cranberries, corn syrup, cream, salt and remaining butter. Cook and stir over medium heat until mixture comes to a boil. Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook, without stirring, until a candy thermometer reads 248° (firm-ball stage)., Remove from heat. Immediately pour into prepared pan (do not scrape saucepan). 1/2 teaspoon ginger

  • Preheat oven to 350 degrees; coat two 9-inch loaf pans with non-stick cooking spray. Pulse cranberries in food processor to chop; set aside.
