1 lb pork tenderloin
1 teaspoon salt
1 onion, chopped
1 celery rib, chopped
1 (15 ounce) whole berry cranberry sauce
3 ounces orange juice
1 teaspoon dry mustard
1/2 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons honey
2 tablespoons brown sugar
3 tablespoons chili sauce or 3 tablespoons barbecue sauce
1 orange, sliced
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Rub salt onto pork tenderloin and place in bottom of crock pot. (You may lightly brown it in a small amount of oil, if you wish.).
  • In a medium bowl, place onion, celery, cranberry sauce, orange juice, dry mustard, cinnamon, lemon juice, honey, brown sugar and chili sauce. Stir and pour over pork tenderloin.
  • Turn crock pot on high for first hour and then allow to cook an additional 2 to 3 hours. Lift lid and quickly place orange slices over pork without stirring. Cook an additional hour.
  • In a small bowl mix cornstarch and cold water. Add last 10 minutes of cooking time for thickening purposes.
  • Serve over cooked rice and enjoy!

2 green onions, minced
1 seeded jalapeno pepper, minced
1/3 cup sugar
3 tablespoons minced fresh mint
2 tablespoons lime juice
1 tablespoon orange juice
1/4 teaspoon ground ginger
2 pork tenderloins (3/4 pound each)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • To make relish, pulse cranberries in food processor until finely chopped. Combine with next seven ingredients. Reserve 1/2 cup relish for grilling; cover and refrigerate the rest., Brush tenderloins with olive oil; sprinkle with salt and pepper. Grill, covered, over direct heat 12-15 minutes, turning occasionally and spooning with reserved relish, until thermometer reads 145°. Let stand 10-15 minutes. Discard used relish. 2 (1 lb) pork tenderloin
1/3 cup orange marmalade
3/4 cup dried cranberries
2 tablespoons honey
salt & pepper

Steps:

  • Combine the cranberries, orange marmalade, and honey.
  • Cut a slit lengthwise in each of the tenderloins.
  • Stuff the combined ingredients into the cavity created by the slit.
  • Using kitchen string, tie the tenderloin closed.
  • Sprinkle any remaining ingredients over the tenderloins and season with salt and pepper.

1 pork tenderloin ( size depends on family)
1 can(s) cranberry sauce ( whole or jelly)
4 Tbsp orange juice, frozen concentrate
1/2 tsp ground nutmeg
1/2 tsp kosher salt
1 Tbsp butter
1 1/2 c pork broth

Steps:

  • 1. In a dutch oven or other baking dish of your choice place your tenderloin, sprinkle with kosher salt.Pour pork broth in.
  • 2. In a small bowl mix cranberry sauce, orange juice concentrate and nutmeg. Mix well, spoon over tenderloin, cover pan and place in oven. Cook for 2 1/2 - 3 hours on 250. Occasionally spoon some broth over. after 3 hours on low, remove lid, add a little more cranberry mix over top, place butter on top, turn heat up to 350 for 15-20 minutes.
