1 cup plus 2 tablespoons all-purpose flour, divided
2 tablespoons plus 1-1/4 cups sugar, divided
1/4 cup cold butter
2/3 cup chopped pecans, divided
1 large egg
2 large egg whites
2 tablespoons fat-free milk
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1 cup chopped fresh or frozen cranberries
1/3 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine 1 cup flour and 2 tablespoons sugar. Cut in butter until crumbly. Stir in 1/3 cup pecans. Press into an ungreased 13x9-in. baking pan. 1 1/4 cup flour
1/2 cup pecans
1/2 cup butter (cut into small pieces)
1/4 teaspoon salt
3/4 cup sugar
3 eggs
3/4 cup sugar
1 teaspoon vanilla
1 1/2 cups cranberries
2 cups pecans

Steps:

  • Place flour, pecans, butter, salt and sugar in a food processor. Process until all ingredients are combined. Mixture will appear dry and lumpy.
  • Pour into a 9"x13" baking dish. Press dough down with your hands. Press edges down so all surface area is even.
  • Bake in a preheated 350 oven for 10 minutes.
  • While the crust is baking, put eggs, sugar, and vanilla into the same food processor bowl (no need to rinse). Process until combined
  • Add cranberries. Pulse until cranberries are chopped, but still have some large pieces.
  • When crust comes out of oven, pour filling mixture over hot crust.
  • Sprinkle pecans over filling.
  • Continue baking for an additional 30 minutes.

3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1/3 cup packed brown sugar
1/3 cup butter, melted
FILLING:
1 package (12 ounces) fresh or frozen cranberries
1/2 cup cranberry juice, divided
1/2 cup golden raisins
1/3 cup honey
Sugar substitute equivalent to 3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon cornstarch
1/4 cup chopped pecans

Steps:

  • In a small bowl, combine the flour, oats and brown sugar. Stir in butter until blended. Set aside 2/3 cup. Pat remaining mixture onto the bottom of a 9-in. square baking pan coated with cooking spray; set aside., In a small saucepan, combine the cranberries, 7 tablespoons cranberry juice, raisins, honey, sugar substitute, cinnamon and cloves.
