QUICK SAVORY CRANBERRY GLAZED PORK LOIN ROAST

Quick Savory Cranberry Glazed Pork Loin Roast image

This simple, 1-hour roast is our favorite Christmas dish and voted most likely to be served if the President were to drop in for dinner- LOL! I love serving this entree because it causes me NO stress and everyone raves over it. While the pork is roasting, make another batch of the cranberry glaze to serve in a gravy boat alongside the sliced pork roast. For food safety, the new batch should not be prepared in same pan as the first if you have been basting directly out of the saucepan. If you basted out of another dish, you can use the same pan.

Provided by carina barnum

Categories     Roasts

Time 4h15m

Number Of Ingredients 9

2 Tbsp vegetable oil
2 lb pork loin roast (i use the small one from costco)
1/2 tsp onion powder
1 tsp minced garlic
1 tsp pumpkin pie spice
1/2 orange rind, grated
1 small onion
1 c cranberry juice cocktail
1 can(s) cranberry sauce

Steps:

  • 1. Heat vegetable oil in a chef's pan
  • 2. Add pork roast. While browning, add the garlic, onion powder, pumpkin pie spice and orange rind.
  • 3. After one side is browned (about 5 minutes), turn over and add onion.
  • 4. When both sides are brown, put in slow cooker and add cranberry juice and cranberry sauce. Cook 4 hours on High or 8 hours on Low.
  • 5. After it's cooked, save the juice to make cranberry gravy.

Tips:

  • Choose the right pork loin roast: Look for a roast that is about 3-4 pounds and has a good amount of marbling. This will help to ensure that the roast is juicy and flavorful.
  • Prepare the roast: Trim any excess fat from the roast and then season it with salt, pepper, and your favorite herbs and spices. You can also add a rub or marinade to the roast for extra flavor.
  • Roast the pork loin: Preheat your oven to 350 degrees Fahrenheit. Place the roast in a roasting pan and cook it for about 1 hour and 15 minutes, or until the internal temperature reaches 145 degrees Fahrenheit. Let the roast rest for 10 minutes before slicing and serving.
  • Make the cranberry sauce: While the roast is cooking, make the cranberry sauce. In a saucepan, combine cranberries, sugar, orange juice, and cinnamon. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sauce has thickened. Serve the sauce with the pork loin roast.
  • Garnish the roast: Before serving, garnish the roast with fresh parsley or rosemary. This will add a pop of color and flavor to the dish.

Conclusion:

Cranberry pork loin roast is a delicious and easy-to-make dish that is perfect for a special occasion meal. The pork loin is juicy and flavorful, and the cranberry sauce adds a tart and tangy sweetness. This dish is sure to be a hit with your family and friends.
