I got this recipe from an issue of Taste of Home and it has become a huge family hit. Requested all year round. Quickly fixes in one dish. Cranberry Jello-o can be used and so can sugar free, tastes great no matter.

1 (8 ounce) box cherry Jell-O
1 (15 ounce) can crushed pineapple
1 (15 ounce) can jellied cranberry sauce
1 (8 ounce) bag frozen strawberries

Steps:

  • Open and drain all liquid from pineapple.
  • In casserole dish fix Jell-o with hot water only, stir until dissolved.
  • Add can of cranberry sauce (I use a whisk to help break it up and remove from can).
  • Gently stir until thoroughly mixed.
  • Add pineapple, stir.
  • Cut whole strawberries into halves or quarters, gently stir berries into jell-o mixture.
  • Cover and refrigerate until set, usually a few hours.
  • As salad sets out some watering effect will occur, but not harmful.
  • Cooking time is refrigeration time.

1 cup sugar
1/2 cup boiling water
2 (3 ounce) packages cherry Jell-O
1 1/2 cups boiling water
30 ounces frozen strawberries (2 small packages)
1/2 cup chopped nuts (optional)

Steps:

  • Mix cranberries, sugar, 1/2 cup boiling water.
  • Let set 1/2 hour.
  • Mix cherry jello with 1 1/2 cups boiling water.
  • Add to cranberry mixture.
  • Thaw frozen strawberries until they can be broken into chunks. Add to mixture.
  • Add nuts if desired.

1 package ramen noodles, crushed, flavor packet discarded
1/4 cup sliced almonds
1/4 cup sunflower seeds
1/4 cup (1/2 stick) butter, melted
1 head romaine lettuce, washed and dried
One 5-ounce bag baby spinach
1 pint strawberries, hulled and thinly sliced
1 cup grated Parmesan
3/4 cup sugar
1/2 cup red wine vinegar
3/4 cup vegetable oil
1/2 teaspoon paprika
1/2 teaspoons salt
2 cloves garlic, minced

Steps:

  • For the salad: Preheat the oven to 400 degrees F. In a small bowl, mix the ramen noodles, almonds, sunflower seeds and melted butter. Transfer to a baking sheet and toast in the oven, stirring occasionally, until browned, about 10 minutes. Remove from the oven and set aside to cool.
  • Tear the lettuce and combine with the spinach, strawberries and cheese in a large salad bowl.
  • For the dressing: Dissolve the sugar in the vinegar. Combine the oil, paprika, salt and garlic and then add to the sugar-vinegar mixture. Mix well and store in the refrigerator until ready to serve.
  • Just before serving, sprinkle the crunchy topping over the salad green and toss the salad with enough dressing to coat the greens.
