TURKEY POTATO CASSEROLE

Turkey Potato Casserole image

This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

Tips:

  • Use fresh ingredients: Fresh mushrooms, turkey, and potatoes will give your soup the best flavor. If you can't find fresh mushrooms, you can use dried mushrooms, but be sure to soak them in hot water for at least 30 minutes before using.
  • Sauté the vegetables: Sautéing the vegetables in butter or oil before adding them to the soup will help to bring out their flavor.
  • Use a good quality chicken broth: The chicken broth is the base of the soup, so it's important to use a good quality broth. If you don't have any on hand, you can make your own by simmering chicken bones in water for several hours.
  • Don't overcook the turkey and vegetables: Overcooked turkey and vegetables will be tough and chewy. Cook them just until they are tender.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a splash of cream or milk for a richer flavor.

Conclusion:

Cream of mushroom, turkey, and potato soup is a delicious and hearty soup that is perfect for a cold winter day. It's also a great way to use up leftover turkey after Thanksgiving or Christmas. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying soup that the whole family will love.
