1 (12 ounce) jar dried beef
4 green onions
2 tablespoons flour
1 pint milk
5 -6 slices toast

Two 8-ounce top sirloin steaks
Kosher salt and freshly ground black pepper
1 1/2 cups sliced cremini mushrooms
1/2 cup diced yellow onion
3 cloves garlic, chopped
2 tablespoons all-purpose flour
1 teaspoon English mustard, such as Coleman's
1 cup milk
2/3 cup chicken broth
1/2 cup stout beer or Madeira wine
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley, plus more for garnish
4 slices thick-cut country bread

Steps:

  • Heat the butter in a medium skillet set over medium-high heat. Sprinkle the steaks with salt and pepper and sear on both sides, about 2 minutes per side for medium rare. Set aside to rest for 5 to 10 minutes.
  • Heat the same skillet over medium heat and add more butter if needed. Add the mushrooms, onions and garlic and cook until the onions are translucent and the mushrooms "weep," or release water, about 5 minutes. This is a long-time favorite recipe of our Lancaster County, PA family passed down from my mom. She gets requests for it all the time and has to make double or triple this amount now whenever she makes it so everyone has some to take along home too. For me, it's a true comfort food if there ever was one! We always serve it over toast and/or homefried potatoes. My dad refer's to it as S.O.S. from his days in the service. (Recipe makes about 4 servings for our hungry family but it freezes very well so any leftovers won't go to waste.)

1/2 lb dried beef (chipped, available at your grocer's deli counter)
1/2 cup butter
1 cup flour
3 1/2 cups milk (I use whole milk and even some heavy cream to make it thick & creamy)
