3 tablespoons margarine
1/3 cup all-purpose flour
3 cups milk
salt, to taste

Steps:

  • Brown ground round. Drain any grease. Add margarine and flour. Cook for a few minutes over medium heat. Add milk. Increase heat and cook, stirring constantly until thickened. Add salt and pepper to taste. Add the cayenne pepper.

1 lb boneless chuck roast, trimmed and cut across the grain into 4 slices

1 1/2 lbs baking potatoes, peeled and cut into 1/2-inch pieces
1/2 cup 2% low-fat milk
