3/4 cup chicken broth

Steps:

  • In a Dutch oven or large kettle, bring 8 cups water to a boil. Add pearl onions; boil until tender, 6-7 minutes. Drain and rinse in cold water; peel and set aside., In a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually stir in broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. 5 green onions, chopped
2 garlic cloves, minced
6 tablespoons butter

2 jar(s) 15-oz. whole pearl onions (*such as aunt nellie's holland style-- don t use pickled onions!)
1/3 cup(s) butter
1/3 cup(s) all purpose flour
2 cup(s) cream or half 'n half
1 -2 tablespoon(s) dry sherry (optional-- not necessary!!!)
1/3 cup(s) freshly grated parmesan cheese
1/2 teaspoon(s) dry mustard powder
pinch(es) nutmeg
- salt and pepper to taste
1/2 cup(s) grated cheddar cheese
- paprika

Steps:

  • Open jar and drain onions. Preheat oven to 350 Deg. F.
  • Melt butter in a 2-quart sauce or saute pan over medium heat. Turn heat to low and stir in the flour. Cook for 2-3 minutes, stirring constantly (you must cook a little to avoid a "raw flour" flavor). Stir in Cream (or Half N Half) and sherry. stir to blend.
  • Stir in Parmesan, mustard powder, nutmeg and salt and pepper to taste. Stir well to thoroughly combine ingredients and melt cheese.
  • Grease a small oven baking dish (or spray with nonstick cooking spray). Put drained onions into baking dish, then cover thoroughly with white sauce mixture. Sprinkle with cheddar cheese over top, then sprinkle on Paprika over top.
  • Bake at 350 deg. F. for 35-40 minutes, until mixture is bubbly and hot. If desired, broil the top briefly until golden brown.
  • Note: You can make this one day ahead and partially bake. Then finish baking for 10-15 minutes on the day you will be serving it.

4 medium yellow onions
1/4 cup extra virgin olive oil
kosher salt & freshly ground black pepper
1 cup heavy cream
1/4 cup dry white wine
2 -3 ounces parmigiano-reggiano cheese, shaved (about 2 tablespoons)

Steps:

  • Preheat the oven to 350°F.
  • Slice the onions into 1/4-inch-thick rounds and lay them in a shallow baking pan, such as a sheet pan or jelly roll pan. Drizzle with the olive oil and season to taste with salt and pepper. Roast for 15 to 18 minutes, or until lightly browned.
  • Meanwhile, in a medium saucepan, bring the cream and wine to a simmer over medium-high heat. As soon as the liquid starts to bubble around the edges, remove from the heat.
  • Spoon about 1-2 tablespoon of the cream mixture over each onion slice. Cover with aluminum foil, return to the oven, and cook for about 25 minutes. increase the oven temperature to 450°F.

2 lbs small red potatoes (preferably new potatoes, skin on or off)
1/4 cup butter (no subs!)
1 -2 tablespoon chopped fresh garlic (or to taste)
1/4 cup flour
2 1/4 cups full-fat milk (can use half and half)
1/2 cup whipping cream
1/2 cup parmesan cheese (can use more if desired)
salt and pepper
1 (16 ounce) package frozen baby peas, thawed and well drained (can use fresh cooked to firm-tender)
1 (10 ounce) package frozen small whole onions, thawed and drained

Steps:

  • Do not cut the small potatoes, leave whole and place then in a pot of boiling salted water; boil for about 20 minutes or until just fork-tender, drain and cool, then cut in half (this can be done well in advance).
  • Melt butter in a large heavy saucepan over low heat.
  • Add in the chopped garlic and saute for about 1 minute.
  • Add in flour and whisk for 2 minutes (do not brown the flour).
  • Gradually add in the full-fat milk (or half and half if using) bring to a simmer whisking continously for 1 minute.
