This is a béchamel (bay-shah-MEL) sauce, which is a French white sauce that can be made thin (1 tbsp each butter and flour to 1 cup milk), medium (2 tbsp each butter and flour to 1 cup milk), or thick (3 tbsp each butter and flour to 1 cup milk). You make the sauce by stiring the milk into a roux, which is made by slowly mixing the flour into the softened butter over very low heat.

CREAMED SPINACH A LA LAWRY'S

Creamed Spinach a La Lawry's image

I worked at Lawry's the Prime Rib on restaurant row in Los Angeles for many years. This is the recipe they gave out for their famous creamed spinach. Fabulous! Even better if you use heavy cream rather than the half and half and I always add a touch of sugar too!

Adjust seasonings if needed. If too salty, add some sugar. If you like nutmeg, that makes a nice addition too.

LAWRY'S PRIME RIB ROAST

Lawry's Prime Rib Roast image

From the original Lawry's The Prime Rib on La Cienaga Blvd. in Beverly Hills. An elegant way to serve your prime rib roast. I'll also post the horseradish recipe. Adjust cooking time for amount of meat.

Categories     Roast Beef

Time 1h50m

Yield 8 serving(s)

Number Of Ingredients 3

1 (4 lb) standing rib roast (4-rib)
Lawry's Seasoned Salt
1 (5 lb) bag rock salt

Steps:

  • Sprinkle fatty cap of roast with seasoned salt to your taste.
  • In heavy roasting pan, spread rock salt evenly over bottom; place wire roasting rack on top of salt.
  • Place the roast on rack, fatty side up. Make sure no salt actually touches the beef.
  • Insert meat thermometer in thickest part of meat, making sure it does not touch a bone.
  • Roast in preheated 350 degrees F. oven until thermometer registers 130 degrees F. for rare, 140 degrees F. for medium or approximately 20 to 25 minutes per pound.
  • Remove from oven and let stand 20 minutes before carving.
  • Using a sharp carving knife, slice meat across the grain for serving.
  • Discard rock salt.
  • Serve with Lawry's Whipped Cream Horseradish.

Tips:

  • Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach.
  • Blanch the spinach: Blanching the spinach helps to remove any bitterness and retain its bright green color.
  • Use a good quality cream: Heavy cream or half-and-half will give the creamed spinach a rich and creamy texture.
  • Season to taste: Add salt, pepper, and nutmeg to taste. You can also add other seasonings, such as garlic powder or onion powder, if desired.
  • Serve immediately: Creamed spinach is best served immediately after it is made. It can be reheated, but it may lose some of its creaminess.
