APPLE SALAD WITH CREAMY MAPLE DRESSING

Apple Salad With Creamy Maple Dressing image

I got this out of a coupon paper, it looks awesome. I'd like to use granny smith apples with this, and it calls for 2 apples so I picked one of each recommended. I'm also subbing the cranberries for chopped dates because it looks sweet enough!

CRUNCHY APPLE SPROUTED SALAD WITH LEMON CREAMY DRESSING

Crunchy Apple Sprouted Salad with Lemon Creamy Dressing image

A crunchy, refreshing salad perfect for any gathering. Pears can be used in place of apples-either choice is delicious.

Yield 6 servings

Number Of Ingredients 13

For the salad:
4 red apples, sliced into thin matchsticks, (like Fuji or Gala)
Juice of half a lemon
⅓ cup sliced almonds
1 medium cucumber, chopped
½ ounce fresh mint, finely chopped
6 ounces pea shoots, or fresh chopped spinach
2 ounces alfalfa sprouts
For the lemon dressing:
1 cup Hellmann's® Carefully Crafted Dressing and Sandwich Spread
1 tablespoon lemon juice, plus zest
3 tablespoons extra-virgin olive oil
¼ teaspoon salt

Steps:

  • In a small bowl, combine the lemon dressing ingredients and set aside.
  • In a large bowl, combine apples and lemon-this will prevent the apples from turning brown. Add the chopped mint, sliced almonds, cucumber, and half the lemon dressing. Combine.
  • Arrange the pea shoots in the bottom of 6 small serving bowls. Divide the apple mixture among the 6 bowls and place over the pea shoots. Top with alfalfa sprouts and extra dressing if desired.

Tips:

  • Choose the right apples: Use firm, tart apples like Granny Smith or Honeycrisp. These hold their shape well in the salad and provide a nice contrast to the sweet dressing.
  • Slice the apples thinly: This will help them absorb the dressing and cook evenly.
  • Don't overcook the apples: They should still have a bit of crunch to them.
  • Make the dressing ahead of time: This will allow the flavors to meld.
  • Serve the salad chilled: This will help the flavors shine.
  • Add your favorite toppings: Try nuts, seeds, dried fruit, or crumbled bacon.

Conclusion:

Creamy apple salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its sweet and tangy dressing, crunchy apples, and creamy mayonnaise, this salad is sure to be a hit at your next gathering.
