1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice

One 8-ounce boneless skinless chicken breast
2 cups bite-sized broccoli florets
8 ounces dried penne
1/2 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. 1/4 cup light sour cream
2 tablespoons grated parmesan cheese
1 tablespoon reduced-calorie mayonnaise
1 tablespoon skim milk
1 clove garlic, minced
3/4 cup fresh broccoli florets
3/4 cup Italian plum tomato (3 to 4 medium)
1 medium carrot, finely shredded (1/2 cup)

1/2 medium red onion, thinly sliced
1/2 cup buttermilk
1/3 cup reduced-fat sour cream
1/4 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
Kosher salt and freshly ground black pepper
6 1/2 cups broccoli florets (about 1 pound), cut into bite-size pieces
1/3 cup golden raisins
2 tablespoons salted roasted sunflower seeds

Steps:

  • Combine the ice cubes, onions and 1 cup water in a small bowl. Let the onions soak for 10 minutes while preparing the rest of the salad, then drain and pat dry.
  • Cook the bacon in a small nonstick skillet over medium-low heat until crispy, about 8 minutes. Transfer to a paper-towel-lined plate to drain, reserving 1 teaspoon drippings for the dressing. Finely chop the bacon strips and reserve.

1 head cauliflower (chopped)
1 c mayonnaise
1 c sour cream
1/2 c sugar .....use less per personal taste ( you can use 3-4 packets of sweetner in place of sugar)
2/3 c bacon bits or 6 slices fried and crumbled bacon ( fried/crumbled bacon is best)
2/3 c shredded cheddar cheese (you can add more or less .. your choice)
salt/pepper to taste
1 tsp poppy seed (optional)
few thin slices halved "red" onion (optional)

Steps:

  • 1. Combine broccoli and cauliflower in a large bowl. In a separate bowl, combine the mayonnaise, sour cream, sugar, poppy seed, salt and pepper to make a creamy dressing. 1 lb bacon, cooked and crumbled
3 bunch broccoli florets - broken into pieces
1 head, cauliflower - broken into pieces
3 carrots, shredded
1 sweet onion, diced
8 oz shedded, cheddar cheese
salt and pepper to taste
DRESSING
4 Tbsp cider vinegar
1 c hellman's mayo
1/2 c sugar

1/8 teaspoon pepper

  • Add all of the salad ingredients to a large bowl except avocados. In a separate medium bowl, whisk together the Dressing ingredients. Add dressing to Salad and toss until evenly coated. Best if chilled for at least 30 minutes up to overnight. Toss with avocados before serving.
