CREAMY COLESLAW WITH FENNEL
This is a nice alternative cole slaw recipe. If you don't have raspberry chardonnay vinegar, cider vinegar, white balsamic, or champagne vinegar will work, as well.

Tips:
- For the best flavor, use fresh, crisp vegetables.
- To make the slaw ahead of time, prepare it up to 24 hours in advance and store it in the refrigerator. When ready to serve, bring it to room temperature for about 30 minutes.
- If you don't have a mandoline, you can use a sharp knife to thinly slice the vegetables.
- Be sure to rinse the celery root and fennel well before using them. This will help to remove any dirt or debris.
- If you don't have apple cider vinegar, you can use white vinegar instead. However, apple cider vinegar has a sweeter flavor that pairs well with the other ingredients in this slaw.
- Feel free to adjust the amount of mayonnaise and mustard in the dressing to taste.
