1 bunch broccoli florets
1 small white onion, finely chopped
3 Tbsp butter
3 Tbsp all purpose flour
1 1/2 c chicken stock (sub veggie stock)
1 c heavy whipping cream
3/4 c shredded cheddar cheese or 1 10oz canned cheese
1 c shredded white cheddar cheese
1 tsp cayenne pepper
1-2 pinch salt and pepper to taste
1/2 c chopped green onion as garnish

Steps:

  • 1. Prep: Cut the head of broccoli into very small florets and discard the stems; finely chop the small white onion
  • 2. Over medium-high heat in a dutch oven or pot, melt the butter and saute the onions about 3-5 minutes until softened. Add the flour and wisk until incorporated.
