2 green onions
3/4 cup loosely packed cilantro leaves
2 garlic cloves, minced
3 tablespoons honey
2 teaspoons sesame oil
2 teaspoons reduced-sodium soy sauce
1/2 to 3/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
10 ounces soft tofu, drained and crumbled (1-1/4 cups)
1/2 cup rice vinegar

Steps:

  • Thinly slice one green onion; set aside. Cut the other onion into pieces; place in a blender. Add the cilantro, garlic, honey, oil, soy sauce, red pepper flakes and salt; cover and process until blended. 1/4 lb silken tofu
1 1/2 tablespoons fresh lime juice
2 garlic cloves
1 shallot, rough chopped
1/2 teaspoon Dijon mustard
1/4 cup water
2 tablespoons olive oil
1 1/2 tablespoons your choice fresh cilantro
salt and pepper (to season)

Steps:

  • Place the tofu, lime, garlic, shallot, mustard, cilantro into food processor with metal blade and blend till pureed.

2 Anaheim chile peppers, halved and seeded
1 ½ cups canola oil
⅓ cup roasted pepitas
⅓ cup red wine vinegar
⅓ cup lime juice
5 tablespoons crumbled cotija cheese
2 cloves garlic, peeled
1 teaspoon salt
¼ teaspoon ground black pepper
2 small bunches fresh cilantro, stems removed
1 ½ cups mayonnaise
¼ cup water

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
