CREAMY MUSHROOM CHICKEN
I call this meal "the easy chicken fixin'"...and love it that the leftovers are equally delicious heated up in the microwave. My husband, Tim, and I spend a lot of time riding horses and playing Cowboy Polo in summer. We are extra busy now since we just had our first child, Shelby.

CREAMY ITALIAN CHICKEN CASSEROLE
There are many Creamy Chicken Casseroles, but I do believe this one is just a tad bit different. This was adapted from a recipe received from All Recipes which was submitted by Blondeprincess. I have adapted this recipe for my family's own tastes. It is very creamy and to us, very good. We served this with salad and garlic breadsticks. This can also be served over rice if preferred.

Tips:
- Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready to go. This will help you stay organized and prevent any scrambling.
- Use fresh ingredients: Fresh ingredients will give your dish the best flavor. If you can, try to use organic or locally-sourced ingredients.
- Don't overcrowd the pan: When you're cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
- Cook the chicken until it's cooked through: Use a meat thermometer to make sure the chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
- Use a good quality cream: The cream is a key ingredient in this dish, so make sure you use a good quality cream. Heavy cream or whipping cream will give you the best results.
- Don't overcook the sauce: The sauce should be cooked until it's thickened and bubbly, but don't overcook it or it will become too thick and gloppy.
- Serve immediately: This dish is best served immediately after it's made. The chicken will be most tender and juicy, and the sauce will be at its peak flavor.
Conclusion:
This creamy Italian mushroom chicken is a delicious and easy-to-make dish that's perfect for a weeknight dinner. It's also a great way to use up leftover chicken. The creamy sauce is rich and flavorful, and the chicken is tender and juicy. Serve this dish over pasta, rice, or mashed potatoes. This dish is sure to please everyone at the table.
