This quick & easy mustard chicken recipe is a delicious, 30-minute, one-pan meal featuring tender chicken breasts smothered in a creamy dijon mustard sauce.

Categories     Main Course

Time 30m

Number Of Ingredients 10

4 boneless, skinless chicken breasts (pounded to an even thickness)
kosher salt & pepper
1 tablespoon olive oil
1 yellow onion (finely chopped (about 1/2 cup))
2 cloves garlic (grated or finely chopped)
3 cups white wine
1/4 cup dijon mustard
2 tablespoons heavy whipping cream
1 tablespoon butter
chopped chives for garnish (optional)

Steps:

  • Heat your cast iron skillet over medium heat. Season the chicken with salt and pepper.
  • Add the olive oil, then cook the chicken about 8 minutes per side, until golden brown and the internal temperature reaches 165º degrees. Transfer the cooked chicken to a plate.
  • In the same skillet, add the onions and season with salt and pepper. Cook for about 4 minutes, or until the onions soften and turn translucent. Add the garlic cloves, and cook just 30 seconds.
  • Add the white wine, dijon mustard, and stir to combine. Cook until the sauce has reduced by half, will take about 5 minutes. Turn the heat to low, then add the heavy cream and butter. Whisk to combine. Add the chicken back to the skillet to warm thru.
  • Serve the chicken warm, topped with the creamy dijon mustard sauce and chopped chives. I love this on top of white rice, cauliflower rice, mashed potatoes, mashed cauliflower or roasted potatoes.

Categories     Chicken     Mustard     Low Fat     Quick & Easy     Low Cal     Spring     Couscous     Gourmet

Yield Serves 2

Number Of Ingredients 9

1 whole small skinless boneless chicken breast (1/2 pound total), halved
1 tablespoon mustard seeds
1 tablespoon chopped fresh parsley leaves
3/4 cup plus 1 tablespoon water
1/4 teaspoon salt
1/2 cup couscous
2 teaspoons unsalted butter
1 tablespoon fresh lemon juice
Accompaniment if desired: Carrot, Snow Pea, and Red Pepper Julienne in Honey Vinaigrette

Steps:

  • Season chicken with salt and pepper to taste. On a plate combine mustard seeds and parsley and press chicken into seed mixture, coating both sides.
  • In a small saucepan bring 3/4 cup water and salt to a boil. Stir in couscous and let stand, covered, off heat 5 minutes.
  • In a non-stick skillet heat butter over moderate heat until foam subsides and cook chicken on 1 side until golden, about 5 minutes. Turn chicken and cook, covered, over moderately low heat until just cooked through, about 5 minutes.
  • Fluff couscous with a fork and divide between 2 plates. Top couscous with chicken. To skillet add lemon juice and remaining tablespoon water and simmer, scraping up brown bits, 1 minute. Pour sauce over chicken and serve with carrot, snow pea, and red pepper julienne.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use high-quality ingredients: The better the ingredients, the better the dish will taste. Look for fresh, organic produce and high-quality chicken.
  • Don't overcrowd the pan: When searing the chicken, make sure you don't overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it's cooked through: Use a meat thermometer to make sure the chicken is cooked to an internal temperature of 165°F (74°C).
  • Make the sauce while the chicken is cooking: This will save you time and help you avoid overcooking the chicken.
  • Serve the chicken with your favorite sides: This dish goes well with rice, mashed potatoes, or roasted vegetables.

Conclusion:

This creamy mustard chicken with couscous is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the creamy mustard sauce is flavorful and rich. The couscous is a great addition to the dish, as it adds a bit of texture and substance.
