- Heat your cast iron skillet over medium heat. Season the chicken with salt and pepper.
- Add the olive oil, then cook the chicken about 8 minutes per side, until golden brown and the internal temperature reaches 165º degrees. Transfer the cooked chicken to a plate.
- In the same skillet, add the onions and season with salt and pepper. Cook for about 4 minutes, or until the onions soften and turn translucent. Add the garlic cloves, and cook just 30 seconds.

Add grapes to the pan and turn chicken and grapes to coat and combine with the sauce. Simmer 5 minutes over low heat.

Tips:
- Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
- Use high-quality ingredients: The better the ingredients, the better the dish will taste. Look for fresh, organic produce and high-quality chicken.
- Don't overcrowd the pan: When searing the chicken, make sure you don't overcrowd the pan. This will prevent the chicken from cooking evenly.
- Cook the chicken until it's cooked through: Use a meat thermometer to make sure the chicken is cooked to an internal temperature of 165°F (74°C).
- Make the sauce while the chicken is cooking: This will save you time and help you avoid overcooking the chicken.
- Serve the chicken with your favorite sides: This dish goes well with rice, mashed potatoes, or roasted vegetables.

This creamy mustard chicken with couscous is a delicious and easy-to-make dish that is perfect for a weeknight meal.
