1 cup orzo pasta
1 1/4 cups low sodium chicken broth
1 1/4 cups water
1 tablespoon butter
3 garlic cloves, minced (or to your liking)
1 cup frozen chopped spinach, thawed and drained
1 tomatoes, cored and seeded
2 tablespoons fresh basil, chopped
1/2 cup mozzarella cheese, shredded
1 ounce fresh parmesan cheese, grated
12 large shrimp
1/2 tablespoon creole seasoning (optional)
salt and pepper
1 dash red pepper (optional)

Steps:

  • Melt butter in a large skillet.
  • Add garlic and sauté for 2 minutes.
  • Add orzo and sauté for 3 minutes, stirring occasionally.
  • Add chicken broth and water, bring to a boil.
  • Once at a boil reduce heat to a simmer uncovered.
  • Meanwhile core, seed and dice the tomatoes and thaw and strain the spinach.
  • Once the liquid in the orzo begins to absorb (about 5 minutes) add the tomatoes and stir.
  • Let this simmer for another 5 minutes then add the spinach and stir.
  • Cook until the liquid is fully absorbed (about another 15 minutes).
  • In a separate pan sauté the shrimp and sprinkle with creole seasoning (optional, you can use whatever spice you like) until cooked.
  • Add the cheeses and fresh basil, red pepper (optional) to the orzo and stir, then add in the shrimp and serve!

1 large leek (white and light green parts only), sliced and rinsed
2 cloves garlic, minced
12 ounces orzo
3 cups milk
1 1/2 cups shredded Italian cheese blend (about 6 ounces)
1 5-ounce package baby spinach (about 8 cups)
Grated zest and juice of 1 lemon
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 425 degrees F. Toss the mushrooms with 2 tablespoons olive oil, a pinch of salt and a few grinds of pepper on a baking sheet.
  • Spread out in a single layer. Roast, stirring halfway through, until well browned and crisp around the edges, about 25 minutes. Let cool for a few minutes, then scrape up with a spatula and transfer to a bowl.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the leek and garlic, season with salt and pepper and cook until the leek softens, about 2 minutes. Add the orzo, 2 cups water, the milk, 1 teaspoon salt and a few grinds of pepper. 1/2 cup celery, chopped

2 (429 ml) cans low sodium chicken broth (I make my own broth, and use about 1 L)
1/2 teaspoon dried oregano
1/2 teaspoon marjoram

1 1/2 cups skim milk
2 tablespoons flour

  • In a large pot, heat oil. Add carrots, celery and onion. Cook over medium high heat until they are "al dente" (crispy tender) ~ about 5-7 minutes.

1 small butternut squash
3 garlic cloves
2 tablespoons butter
1 cup orzo pasta
3 1/2 cups chicken broth
2 ounces parmesan cheese
3 tablespoons fresh chives, minced
1 lemon
4 ounces Baby Spinach
1/4 teaspoon nutmeg
4 bone in chicken breast halves

Steps:

  • Peel and seed squash, then cut into 1/2 inch pieces. Mince garlic.
  • Using meat pounder, pound thick part of chicken breast to 3/4 to 1 inch thickness. Season chicken with salt and pepper.
  • Place chicken, skin side down, in cold 12 inch skillet, Cover and place over medium heat. Cook, without moving , unitl skin is golden brown, about 15 minutes. Continue to cook, covered, until skin is deep golden brown, rotating skillet halfway through cooking. Transfer to platter, tent with foil.
  • While chicken cooks, melt butter in large sauce pan over medium heat. Add garlic and cook until fragrant, about thirty seconds. Stir in orzo and cook for one minute. Add squash and broth, bring to boil, and cook, stirring often, until orzo and squash are both tender, about 15 minutes.
  • While orzo is cooking grate parmesan (1 cup) mince three tablespoons chives and squeeze 1 teaspoon lemon juice.
  • Off heat stir in babay spinach, nutmeg, parmesan, 2 tablespponsschives and lemon juice. Let sit unccovered for 5 minutes to thicken. Sprinkle renaining chives over chicken.

1 (4-ounce) piece of pancetta, diced into 1/2-inch pieces
1/2 medium yellow onion, finely chopped
1 teaspoon finely chopped fresh thyme leaves
1 3/4 cups orzo pasta (about 11 ounces)
2 1/2 cups water, plus more as needed
1 1/2 cups milk (not nonfat)
3/4 teaspoon fine salt, plus more for seasoning
1/4 cup finely chopped fresh Italian parsley
2 tablespoons grated Parmesan cheese

Steps:

  • Heat a Dutch oven or large, heavy-bottomed pot over medium heat until hot, about 3 minutes. Add the pancetta and cook until the fat starts to render out, about 1 minute. Add the onion and thyme and cook, stirring occasionally, until the onion is softened, 5 to 6 minutes. Add the orzo and cook, stirring occasionally, until lightly toasted and fragrant, about 2 minutes. Add 2 1/2 cups water and scrape up any browned bits from the bottom of the pan with a wooden spoon. Add the milk and 3/4 teaspoon salt, stir to combine, and bring to a boil. Reduce the heat to medium-low and simmer uncovered, stirring often and making sure to scrape the bottom and corners of the pan with the wooden spoon, until almost all of the liquid is absorbed and the orzo is tender, about 10 minutes. (Depending on the brand of orzo, you may need more liquid, so add more water, 2 tablespoons at a time, if all of the liquid is absorbed but the orzo is not tender yet; you want the final mixture to be creamy, but not clumpy and gluey.) Remove the pot from the heat and stir in the parsley and Parmesan. Taste and season with more salt as needed. Serve immediately. Recipe Notes • Pancetta substitution: Pancetta is an unsmoked Italian bacon. CREAMY ORZO with FETA SUN-DRIED TOMATOES:
12 pitted kalamata olives, divided
3 T fresh bread crumbs
3 T minced oil packed sun-dried tomatoes
1 T minced lemon zest
2 cloves garlic
1 tsp dried oregano
2 boneless, skinless chicken breast halces (6 oz each), trimmed of fat
2 tsp extra virgin olive oil
1/4 c dicd onion
1/4 c dry white wine
1 1/2 c low sodium chicken broth
1 T fresh lemon juice
1 tsp cornstarch
START BOILING THE PASTA BEFORE MAKING THE ROULADES, THEN FINISH THE ORZO DISH WHILE THE CHICKEN SIMMERS.
1 1/2 C low sodium chicken broth
1/2 c dry orzo pasta (4oz)
2 T minced oil-packed sun-dried tomatoes
2 T crumbled feta cheese (1oz)
1/8 tsp EACH kosher salt and black pepper

Steps:

  • DICE 6 olives; set aside. Process remaining 6 olives, bread crumbs, tomatoes, zest, garlic, and oregano in a food processor until minced. USING a meat mallet, pound chicken between plastic wrap to 1/4-inch thickness. Spread olive-tomato filling on chicken. Roll chicken; secure with toothpicks. SAUTE roulades in oil in a large nonstick skillet over medium high heat until browned, 4 minutes. Remove roulades to a plate. Add onion to skillet and sauté 2 minutes. Add wine; cook until liquid reduced by half, 1-2 minutes. Add broth. Bring mixture to a boil; and diced olives and roulades. COVER skillet, reduce heat. Simmer roulades 10 minutes; remove roulades to a plate. Whisk together lemon juice and cornstarch; stir into sauce in skillet. Simmer 1 minute. Slice roulades, serve with sauce. CREAMY ORZO WITH FETA SUN-DRIED TOMATOES: BRING broth to a boil in a small saucepan; stir in orzo. Return liquid to a boil. Cook orzo, uncovered, stirring occasionally, until the liquid is absorbed, 9 minutes. Remove saucepan from heat. STIR tomatoes and feta into orzo, mixing until feta melts slightly. Season orzo mixture with salt and pepper. Serve with chicken roulades.
