1 (15-ounce) can low-sodium pinto beans, rinsed and drained
2 garlic cloves, chopped

1 1/2 teaspoons red wine vinegar
1/4 teaspoon dried oregano
3/4 teaspoon kosher salt, plus more
1/4 teaspoon freshly ground black pepper, plus more

These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.
