1 cup Gold Medal™ all-purpose flour
1 tablespoon sugar
3 eggs, separated
1 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/2 cup half-and-half
2 1/2 cups cut-up rhubarb
1/3 cup sugar
1 teaspoon vanilla
1/4 cup flaked coconut

Steps:

  • Heat oven to 350°F. Mix butter, 1 cup flour and 1 tablespoon sugar. Press evenly in ungreased square pan, 9x9x2 inches. Bake 10 minutes.
  • Mix egg yolks, 1 cup sugar, 2 tablespoons flour, the salt and half-and-half in large bowl. Stir in rhubarb. Pour over hot crust. Bake 45 minutes.
  • Beat egg whites in medium bowl with electric mixer on high speed until foamy. Beat in 1/3 cup sugar, 1 tablespoon at a time; continue beating until stiff and glossy (do not underbeat). Beat in vanilla. Spread over rhubarb mixture; sprinkle with coconut. Bake about 10 minutes or until light brown; cool about 30 minutes. Cut into about 3-inch squares.

MERINGUE:
6 egg whites

  • In a small bowl, combine flour and sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. baking dish. Bake at 350° for 20 minutes. 1 ¼ cups all-purpose flour

½ teaspoon ground cinnamon
2 tablespoons water
3 tablespoons cornstarch
2 egg whites
½ cup white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square baking dish.

1 cup butter
2 cups flour
2 Tablespoons sugar
6 eggs, separated
2 cups sugar
1/4 cup flour
1 cup Heavy Whipping Cream
1/4 teaspoon salt
5 cups rhubarb, sliced in 1/2 in pieces
1/4 teaspoon cream of tartar
3/4 cup sugar

Steps:

  • Preheat oven to 350*F
  • Spray a 9x13 casserole dish and set aside.
  • In a bowl combine butter, 2 cups flour and 2 Tablespoons of sugar with a fork until it resembles crumbs. {see photo}
  • Press mixture into casserole dish and bake for 10 minutes.
  • While crust is baking, make filling.
  • In the same bowl as before {no need to dirty another bowl!} combine 6 egg yolks, 2 cups of sugar, 1/4 cup flour, heavy whipping cream, salt and rhubarb.
  • When crust is done, pour rhubarb mixture over hot crust and bake for 45 minutes.
  • In a new bowl beat egg whites and cream of tartar until egg whites are at a soft peak. Add 3/4 cup of sugar a little at a time and continue beating until all of sugar has been added and you get stiff peaks.
  • Once rhubarb filling is done cooking and still hot Immediately top with meringue.
  • Using the back of a spoon make little peaks all over meringue and return to oven for 15 minutes.
  • Remove from oven, allow to cool for 20 minutes or longer, then slice and share!

100g butter , room temperature
100g golden caster sugar
100g mixed nuts , such as walnuts, brazil nuts, almonds and hazelnuts, roughly chopped (you can buy these as a mixed pack)
1tsp ground cinnamon
250g dark muscovado sugar
1 large egg
225g plain flour
1tsp bicarbonate of soda
300ml undefined
300g rhubarb , cut into 1cm pieces

  • Preheat the oven to 180C/gas 4/fan 160C. If baking to cut into squares, line a 33 x 23 x 5cm baking tin with non-stick baking parchment. If serving as a pudding simply grease a similar-sized ovenproof dish with a little butter.
  • Melt about 15g/1⁄2oz of the butter and stir into the caster sugar, nuts and cinnamon in a bowl. Set aside.
