CHEESE TORTELLINI WITH CREAMY TOMATO AND SPINACH SAUCE

Cheese Tortellini with Creamy Tomato and Spinach Sauce image

This is a copycat recipe from a local chain of restaurants. They took it off their menu, so I had to develop my own. It turned out so good, it might be just better than the original. Garnish with more basil and Parmesan.

Time 55m

Yield 6

Number Of Ingredients 12

1 (12 ounce) package frozen cheese tortellini
⅓ cup sun-dried tomatoes packed in oil, drained and oil reserved
2 boneless, skinless chicken breasts, cut in bite-sized pieces
salt and ground black pepper to taste
3 cloves garlic, thinly sliced
1 (10 ounce) can diced tomatoes
1 cup whipping cream
⅔ cup dry white wine
1 cup frozen chopped spinach, thawed and drained
2 tablespoons chopped fresh basil
1 cup heavy whipping cream
⅓ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top but skin is nearly soft, about 2 minutes. Drain well.
  • Slice sun-dried tomatoes thinly. Heat 1 tablespoon reserved tomato oil in a large skillet over medium-high heat. Season chicken with salt and pepper and add to the skillet; saute until golden, 3 to 4 minutes. Add garlic and stir for 30 seconds. Pour in sun-dried tomatoes, diced tomatoes, cream, and white wine; bring to a boil. Reduce heat to medium-low, cover skillet, and simmer until chicken is just cooked through, about 3 minutes.
  • Transfer chicken to a separate dish. Add spinach and basil to the skillet and stir. Increase heat slightly and boil until sauce thickens enough to coat the back of a spoon, about 3 minutes. Season sauce with salt and pepper. Return chicken and cooked tortellini to skillet; cook and stir over medium heat until heated through, about 2 minutes more. Stir in Parmesan cheese.

Number Of Ingredients 17

1 1/2 tablespoons olive oil
1 1/3 cups yellow onion, chopped
1 1/3 cups carrots, diced
6 to 8 ounces cremini mushrooms, sliced
3 cloves garlic, minced
4 1/2 cups low-sodium chicken broth
1 pound chicken breasts, boneless, skinless, pounded evenly to about 1/2-inch thickness
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and freshly ground black pepper
1/4 cup unsalted butter, sliced into 1 tablespoon pieces
1/3 cup flour
2 1/2 cups milk
9 ounces refrigerated three cheese tortellini
4 cups fresh spinach
1/3 cup heavy cream
Parmesan cheese, finely shredded for serving

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion, carrots and mushrooms and saute 3 minutes then add garlic and saute 1 minute longer. Add in chicken broth, chicken, oregano and thyme and season with salt and pepper. Bring to a boil, then reduce heat to medium-low, cover pot with lid and allow to simmer 10 to 15 minutes until chicken is cooked through (it should register 165°F in center on an instant read thermometer). While chicken is cooking, melt butter in a medium saucepan over medium heat. Add flour and cook, whisking constantly 1 minute. While whisking vigorously slowly pour in milk. Season with salt and pepper and bring mixture just to a light boil, stirring constantly. Remove from heat and set aside. Remove cooked chicken from soup and transfer to a cutting board, let rest 5 minutes then cut into pieces. Meanwhile, add tortellini to soup in pot, cover pot with lid and allow to boil over medium heat about 7 minutes (or time directed on package) adding in spinach during last 1 minute. Stir in chicken, white sauce and cream. Serve warm with parmesan cheese.

Slow Cooker Creamy Tortellini Spinach Soup image

Thick, rich, and hearty, this vegetarian soup is the perfect comforting end to a cool day. Tortellini, spinach, tomatoes, and cheese - what could go wrong?! Just add sausage for the meat-eaters.

Provided by Kare for Kitchen Treaty

Time 5h20m

Number Of Ingredients 16

1/2 medium yellow onion (diced (about 1 cup))
2 medium carrots (peeled and chopped (about 3/4 cup))
2 medium cloves garlic (minced (about 2 teaspoons))
1/2 teaspoon dried oregano*
1/2 teaspoon dried basil*
1 bay leaf
1 teaspoon kosher salt + more to taste
1/2 teaspoon black pepper + more to taste
1 28-ounce can crushed tomatoes
4 cups 1 32-ounce box vegetable broth
1 12-ounce package dry cheese tortellini
4 cups about 4 ounces packed baby spinach
1 cup half-and-half
1/2 cup 2 ounces shredded mozzarella cheese
1/4 cup 1 ounce grated Parmesan cheese
Ground sweet Italian sausage (3/4 pound if adding to all; use about 1/3 pound if adding to half)

Steps:

  • Add the carrots, onion, garlic, spices, tomatoes and broth to the slow cooker.
  • Cover and cook on low until the carrots are tender, 3-6 hours (time varies depending on your slow cooker. If you cook it for longer - say, 8 hours - it won't hurt).
  • Add the tortellini to the slow cooker, stir to combine, cover, and cook on high 20 minutes.
  • Add the spinach, stir until wilted, cover again, and cook another 5 minutes.
  • Warm the half and half in the microwave for 30 seconds. Add the cream, mozzarella, and Parmesan to the slow cooker. Stir until thoroughly combined and turn off the heat.
  • Remove bay leaf. Season with additional salt and pepper to taste.
  • If adding sausage, place a large skillet over medium-high heat. Once hot, add sausage to the pan and brown, breaking into small pieces with a spatula or wooden spoon as it cooks. Add cooked sausage to individual servings.

Tips:

  • Fresh baby spinach is the best choice for this recipe, but you can use frozen spinach if needed. If using frozen spinach, thaw it completely and squeeze out any excess water before adding it to the skillet.
  • Use a large skillet or Dutch oven to cook the tortellini. This will give the tortellini plenty of room to cook evenly.
  • Don't overcrowd the skillet when adding the tortellini. Cook the tortellini in batches if necessary.
  • Cook the tortellini according to the package directions. The cooking time will vary depending on the type of tortellini you are using.
  • While the tortellini is cooking, make the creamy spinach sauce. This sauce is very simple to make, but it is packed with flavor.
  • To make the creamy spinach sauce, simply sauté some garlic and shallots in butter. Then, add the spinach and cook until it is wilted. Finally, stir in the heavy cream, Parmesan cheese, salt, and pepper.
  • Once the tortellini is cooked, add it to the creamy spinach sauce and stir to combine. Serve immediately.

Conclusion:

This creamy spinach tortellini is a quick and easy meal that is perfect for a weeknight dinner. It is also a great way to use up leftover tortellini. The creamy spinach sauce is delicious and flavorful, and the tortellini is cooked to perfection. This dish is sure to please everyone at the table.
