I made this cake today..I have had this idea in my head for a month or so.. then my computer got a virus and I got busy pet sitting and child sitting-- so this is the final recipe. I also got a new red aluminum no-stick bundt pan to make it in. It worked perfect!

CAKE
1 pkg snickerdoodle cookie dough break and bake cookies
15 oz pkg. chocolate cake mix
1/3 c melted butter, use in place of the oil in cake mix directions
3 large eggs
1 c water
FILLING
11 oz cream cheese, softened
1/2 c granulated sugar
FROSTING
1/2 c chocolate chips, mini
2 tsp soft butter
2 tsp corn syrup

Steps:

  • 1. Preheat oven to 350^. Spray bundt pan lightly with baking spray.
  • 2. Place 3 of the cookie pieces in each of the flutes in the bundt pan. Pat the cookie dough in the bundt pan with the cinnamon sugar side against the sprayed surface; up the side and the center tube as evenly as possible. Place pan in the freezer while preparing the cake mix.
  • 3. Combine the cake mix and remaining ingredients and blend well , beating for 3 minutes at medium speed. remove 2 cups of the batter and set aside. Make filling: combine and beat until smooth the cream cheese and sugar. Set aside.
  • 4. Remove bundt pan from freezer.Pour the cake batter (less the 2 cups) into the bundt pan. Smooth top evenly.
  • 5. Using a small spoon place the filling on top of the cake batter, until all used up;smooth evenly.
  • 6. Spoon remaining cake batter over cream cheese mixture. Bake for about 55 minutes. Test with a cake tester or toothpick. When don cool in pan for 30 minutes then invert onto cake dish and make the frosting.
  • 7. Frosting. Place mini chips in measuring cup with the butter and corn syrup; microwave for 30 seconds. spread on warm cake. Cool completely before cutting.
  • 8. frosted. HERE IS AN ALTERNATE RECIPE. Use peanut butter cookie dough. 1 box (3.4 oz) Jell-O™ vanilla-flavor instant pudding & pie filling mix
1 cup milk
1/2 cup butter, melted
4 eggs
1 cup Kraft Jet Puffed marshmallow creme (from 7-oz jar)
1/2 cup butter, softened
1/2 teaspoon vanilla
2 to 3 teaspoons milk
1 1/2 cups powdered sugar
1 tablespoon powdered sugar

Steps:

  • Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.
  • In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • Bake 38 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven. Let stand 20 minutes; remove from pan to cooling rack. Cool completely, about 1 hour 30 minutes.
  • In large bowl, beat marshmallow creme, 1/2 cup softened butter, the vanilla and 2 teaspoons milk with spoon until blended. Beat in powdered sugar until fluffy. If necessary, beat in more milk, a few drops at a time, until spreading consistency. Place filling in decorating bag fitted with 1/2-inch round piping tip. Set aside.
  • Carefully place cake top side down on cooling rack. Using melon baller, scoop out 10 1-inch holes about 2 inches deep, evenly spaced in circle around bottom of cake, reserving cut pieces. Pipe generous 2 tablespoons filling to fill each hole, or pipe until filling becomes level with bottom of cake. Place reserved pieces of cake over filling to cover. Place serving platter on bottom of cake, and turn over so cake is right side up.
  • When ready to serve, sprinkle top of cake with 1 tablespoon powdered sugar. Loosely cover and refrigerate any remaining cake.

9 oz. (255 g) crispy chocolate cookies, such as Nabisco chocolate wafers
3 Tbsp. granulated sugar
½ tsp. kosher salt
7 Tbsp. (99 g) unsalted butter, melted and cooled slightly
½ tsp. vanilla extract
16 oz. (453 g) cream cheese, at room temperature
One 14-oz. can (397 g) sweetened condensed milk
½ tsp. kosher salt
3 Tbsp. freshly squeezed lemon juice
2 tsp. vanilla extract
Dutch-process cocoa powder for dusting (optional)

Steps:

  • Grease a 9" springform pan with cooking spray or softened butter. Line the bottom and sides with parchment paper.
  • To make the crust, process the cookies, sugar, and salt in the bowl of a food processor until the cookies are finely ground. Pour in the butter and vanilla and process until the mixture holds together when squeezed. Alternatively, you may place the dry ingredients in a sealed resealable plastic bag, cover it with a tea towel, and crush the crackers with a rolling pin.
