VENISON CHEDDAR-JALAPENO SUMMER SAUSAGE
This is a nice change from regular summer sausage. The cheddar and jalapenos give it a bit of a spicy kick that is sure to please at gatherings. We serve this at the 'Beast Feasts' we host every year where all the dishes are from wild game. This recipe works well with beef as well.

Tips:
- Choose the right venison: Use venison from a young deer, as the meat will be more tender. If you are using older venison, you may want to soak it in buttermilk or brine it before cooking to help tenderize it.
- Grind the venison coarsely: This will help to keep the sausage moist and flavorful. If you grind the venison too finely, it will become dry and crumbly.
- Use a variety of seasonings: Creole seasoning, garlic, onion, cayenne pepper, and paprika are all common seasonings used in venison sausage. You can also add other herbs and spices to taste.
- Mix the sausage thoroughly: This will help to ensure that the seasonings are evenly distributed throughout the sausage.
- Stuff the sausage into casings: You can use natural casings or collagen casings. If you are using natural casings, be sure to soak them in water for at least 30 minutes before using them.
- Cook the sausage thoroughly: Sausage is safe to eat when it reaches an internal temperature of 160 degrees Fahrenheit.
Conclusion:
Creole venison sausage is a delicious and versatile dish that can be enjoyed in a variety of ways. It can be grilled, fried, or smoked. It can also be used in soups, stews, and casseroles. No matter how you choose to cook it, Creole venison sausage is sure to be a hit.
