SPICY POPCORN

Don't worry if you don't have a popcorn maker -- you can achieve the same results in a 4-quart pot.

Provided by Martha Stewart

Categories     Food & Cooking     Snacks

Number Of Ingredients 8

2 tablespoons vegetable oil
3/4 cup popping corn kernels
4 tablespoons unsalted butter, melted
1 teaspoon garam masala
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper

Steps:

  • Heat a 4-quart pot with a tight-fitting lid on the stove top. Add the oil and swirl it around to coat the bottom of the pot. Get it hot enough to sizzle when the kernel hits the oil. Pour the corn in all at once, cover, and shake. Swirl the pot over the top of the burner once or twice until you hear the first few kernels pop. Once the corn is popping, swirl the pot continuously until the popping stops. Or, use a popcorn maker if you want to. Dump the popcorn in a large bowl.
  • Pour the melted butter over the corn and toss well to fully coat the kernels. Sprinkle the spices over the popcorn and toss until everything is well combined.

CAJUN-SPICED POPCORN

Cajun-Spiced Popcorn image

This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

Provided by Redneck Epicurean

Categories     Lunch/Snacks

Time 15m

Yield 3 quarts

Number Of Ingredients 8

3 quarts popped popcorn
1/4 cup butter, melted
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon lemon pepper

Steps:

  • In small bowl, place 1 quart hot popped corn; set aside.
  • In large bowl, pour butter over remaining popcorn.
  • Combine remaining ingredients. Sprinkle over buttered popped corn, tossing gently to coat.
  • Spread on 15x10-inch baking; sheet and bake at 300°F for 3 minutes, or until desired crispness.
  • Mix in reserved popcorn. Serve immediately or store in airtight container.

Tips:

  • Use fresh ingredients: Fresh popcorn kernels, spices, and oil will give your popcorn the best flavor.
  • Pop the popcorn in a large pot: This will give the popcorn kernels room to pop and prevent them from burning.
  • Don't overcrowd the pot: If you overcrowd the pot, the popcorn kernels will not pop evenly.
  • Shake the pot while the popcorn is popping: This will help to distribute the heat evenly and prevent the popcorn from burning.
  • Remove the popcorn from the heat as soon as it is finished popping: This will prevent the popcorn from burning and becoming tough.
  • Season the popcorn immediately: This will help the popcorn to absorb the flavors of the spices.
  • Enjoy the popcorn fresh: Popcorn is best when it is fresh, so enjoy it right away.

Conclusion:

Creole spiced popcorn is a delicious and easy-to-make snack that is perfect for any occasion. It is a great way to use up leftover popcorn kernels, and it is also a fun and festive treat to serve at parties. With just a few simple ingredients, you can make a batch of Creole spiced popcorn that is sure to be a hit with everyone who tries it.
