Number Of Ingredients 11

8 slices bacon
1 1/2 cups grated sharp white cheddar cheese (4 ounces)
1/2 cup sour cream
1 small yellow bell pepper, cut into 1/4-inch dice
2 scallions, white and pale-green parts only, thinly sliced
1/4 cup all-purpose flour
1/2 teaspoon dry mustard
Coarse salt and freshly ground black pepper
Pinch of cayenne pepper
2 large eggs, separated
2 tablespoons vegetable oil, plus more if necessary (optional)

Steps:

  • Cook bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Transfer to paper towels to drain. Pour off fat into a bowl. Wipe skillet clean with a paper towel; set aside.
  • Stir together cheese, sour cream, bell pepper, scallions, flour, mustard, 1/2 teaspoon salt, 1/4 teaspoon pepper, cayenne, and egg yolks in a large bowl; set aside. In another large bowl, beat egg whites until stiff peaks form. Fold beaten egg whites into reserved batter.
  • Heat 2 tablespoons reserved fat (or vegetable oil) in skillet over medium heat until hot but not smoking. Season with salt and pepper. Serve hot with reserved bacon.

BACON CHEDDAR JALAPEñO CORNBREAD

Bacon Cheddar Jalapeño Cornbread image

This bacon jalapeño cornbread is the result of combining a number of my favorite cornbread recipes. The first time I made it, I had people begging for the recipe. The problem was that it didn't exist, as I had just improvised it as I went along. Here's my attempt to put it down in words.

Categories     Cornbread

Time 1h

Yield 12

Number Of Ingredients 12

5 slices bacon
3 cups all-purpose flour
1 cup yellow cornmeal
¼ cup white sugar
2 tablespoons baking powder
2 teaspoons kosher salt
1 cup milk
1 cup buttermilk
1 cup unsalted butter, melted
3 extra large eggs, lightly beaten
1 (8 ounce) package shredded sharp Cheddar cheese
3 jalapeno peppers, diced

Steps:

  • Fry bacon in a large cast iron skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer bacon to a paper towel-lined plate; reserve remaining bacon grease in the skillet. Crumble bacon.
  • Preheat the oven to 350 degrees F (175 degrees C). Place the skillet with bacon grease in the oven.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Whisk milk, buttermilk, butter, and eggs in another bowl; stir milk mixture into flour mixture until just combined. Batter will be slightly lumpy. Fold in Cheddar cheese and jalapeño peppers. Allow batter to rest at room temperature for 10 minutes.
  • Pour batter into the hot skillet; sprinkle with crumbled bacon, gently pressing bacon into batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pan for 10 minutes before slicing.

Tips:

  • For crispy cheddar cakes, use cold ingredients and grated cheese. Chilling the dough before frying helps the cakes hold their shape and prevents them from spreading too much.
  • Use a large skillet or griddle to cook the cakes in batches. This will help prevent overcrowding and ensure that the cakes cook evenly.
  • Cook the cakes over medium heat until they are golden brown and crispy on both sides. This will take about 2-3 minutes per side.
  • Serve the cheddar cakes immediately with your favorite dipping sauce. They are also great as a snack or appetizer.

Conclusion:

Crispy cheddar cakes with bacon are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. With just a few simple ingredients, you can make these tasty treats that will be a hit with everyone. So next time you are looking for a quick and easy recipe, give these cheddar cakes a try.
