1/2 c flour
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp paprika
dash of pepper
1/2 c buttermilk
8 oz whole fresh mushrooms
oil for frying

Steps:

  • 1. Mix flour, salt, mustard, paprika, and pepper in large plastic food storage bag. Set aside. Place buttermilk in small bowl. Dip a few mushrooms at a time in buttermilk. Place in bag with flour mixture. Shake to coat.
  • 2. Heat 2 to 3 inches oil in deep-fryer or heavy saucepan to 375 F. Fry a few mushrooms at a time, 2 to 3 minutes, or until deep golden brown, turning over several times. Drain on paper towels. Serve hot with condiment of your choice. I like spicy ranch dressing, or good old ketchup.

1 1/4 c panko breadcrumbs
1 1/2 tsp old bay seasoning
1 tsp marjoram
1/2 tsp garlic powder
1/2 tsp salt
1 c buttermilk
1 1/2 lb white button mushrooms stems trimmed
1/2 c flour
cooking oil

Steps:

  • 1. In a small bowl combine the bread crumbs, Old Bay seasoning, marjoram, garlic powder, and salt. Add the buttermilk to another small bowl.
  • 2. Wash and dry your mushrooms thoroughly. Add the mushrooms to a zipper storage bag. Add the flour and shake to coat. Dip them in the buttermilk and roll them through the seasoned panko breadcrumbs.
