2 lbs potatoes, peeled, sliced
1/3 cup onion, chopped
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
3 cups milk, heated

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Lightly spray a 2 quart casserole with vegetable spray.
  • Arrange a layer of potatoes in casserole, then sprinkle with some of onion, flour, salt and pepper.

  • Dot top with butter, then pour milk over all.
  • Bake 20 min, then reduce heat to 350 degrees Fahrenheit and bake 50 to 60 min longer or until potatoes are tender.

Tips:

  • Use a variety of potatoes. This will give your scalloped potatoes a more complex flavor and texture. Good choices include Yukon Gold, Russet, and Red potatoes.
  • Slice your potatoes thinly. This will help them cook evenly and become crispy on the edges.
  • Don't overcrowd the baking dish. If the potatoes are too crowded, they won't cook evenly.
  • Use a flavorful cheese. A good choice is a sharp cheddar or Gruyère.
  • Don't skimp on the butter. Butter adds richness and flavor to scalloped potatoes.
  • Bake the potatoes until they are tender and the top is golden brown. This usually takes about an hour.
