  • Heat the oil and unsalted butter in a saucepan over medium-low heat until it reaches 220 degrees F. 8 small shallots, peeled, root end trimmed

Steps:

  • Pulse garlic, mint, oil, and 1 cup parsley in a food processor until very finely chopped; season with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Season chicken with salt and pepper and spread herb paste over flesh side. Place, skin side up, on a wire rack set inside a rimmed baking sheet; chill at least 3 hours (the dryer the skin, the crisper it'll get).

10 chicken thighs, with the skin on
1 garlic, bulb broken up and ends trimmed
1 bunch thyme
2 tablespoons whole black peppercorns
2 tablespoons rock salt
1 teaspoon paprika (smoked sweet)
12 shallots
50 g butter (Just under 2 Tablespoons)
3 egg yolks
500 ml/ 2 cups extra virgin olive oil
lemon

1 bunch rocket
1 tablespoon sherry wine vinegar

  • Salt Crusted Chicken.
  • Toss the chicken thighs together with thyme, shallots, salt and peppercorns in a large bowl. Place a wire rack over a roasting tray. Arrange the chicken and the garlic on top of a roasting rack. Place in the fridge overnight or for a minimum of 2-3 hours.
  • Pre-heat the oven to 180 degrees C/350°F Drain the roasting tray of any chicken juice that has been extracted by the salting process.
  • Pour about a cup of water into the roasting tray.
  • Rub the chicken thighs with butter. Scatter on top the shallots and the garlic from the marinade. Place the rack with the chicken back on top of the roasting tray. Dust the chicken thighs with paprika and place in the oven to roast until the skin is crispy and the chicken thighs are done.
  • Roasted Garlic Aioli.
  • Meanwhile, make your mayonnaise by whisking the egg yolks with the juice of 1 lemon and a pinch of salt. While whisking, slowly incorporate the oil into the egg yolk mixture until you get a smooth, thick texture.
  • When the chicken is cooked, remove the roasted garlic and squeeze the soft centre into the mayo and whisk to blend.
  • To serve.
  • To serve divide the shallots and chicken between your plates. Dress the rocket with the sherry vinegar and scatter over the chicken. Dollop with the roasted garlic mayo.

1 1/2 cups light vegetable or olive oil
9 tablespoons butter
5 to 6 shallots peeled and sliced into thin rings
2 large yellow turnips (rutabagas), about four pounds
2 teaspoons kosher salt
1 cup milk
1/2 teaspoon freshly ground black pepper

Steps:

  • In a saucepan, heat the oil with three tablespoons of butter over medium-low heat until it begins to bubble. Reduce the heat to low, add the shallots, and cook them until they are a rich golden brown, 30 to 40 minutes. Stir the shallots occasionally while they are cooking to make sure they brown evenly.
  • Remove the shallots from the oil with a slotted spoon and drain them on paper towels. Once the shallots have dried and crisped, in about 15 minutes, they can be stored in a cool place, covered, for several days. Serve the shallots at room temperature.
  • Peel the turnips to remove their waxy skins and cut them into generous one-inch chunks. Put them in a saucepan with water to cover and one teaspoon of salt. Bring to a boil and simmer covered, until the turnips are easily pierced by a paring knife, about 35 minutes.
  • In a separate saucepan, heat the milk and the remaining six tablespoons of butter over low heat until the butter has melted and the milk just begins to simmer.
  • Drain the turnips and puree (in several batches, if necessary) in a food processor. With the motor running, add the melted butter and milk in a steady stream. The turnips should be very smooth.
  • Return the turnip puree to the saucepan, season with one teaspoon salt and the pepper and reheat, stirring, over medium flame. Serve piping hot, sprinkle generously with crispy shallots.

1 1/2 cups short-grain sticky rice
1 can (15 ounces) white hominy, drained
3/4 teaspoon salt
2 tablespoons sesame seeds, toasted (page 332)
1 tablespoon sugar, plus sugar for serving
1 cup Ground Steamed Mung Bean (page 322), at room temperature
1/3 cup Crispy Caramelized Shallot (page 314)

Steps:

  • Put the rice in a bowl and add water to cover by 1 inch. Let stand for at least 2 hours (or even overnight).
  • Dump the rice into a colander and rinse under cold running water. Shake the colander to expel extra water and then return the rice to the bowl. Add the hominy, breaking it up into individual kernels. Toss the rice and hominy with 1/4 teaspoon of the salt.
  • Fill the steamer pan halfway with water and bring to a rolling boil over high heat. If you are concerned about cleanup and/or the rice falling through the holes of the steamer tray, line the tray with a piece of parchment paper or banana leaf, leaving a few holes uncovered for heat circulation. Pour the rice and hominy into the tray, keeping the mixture 1 inch away from the edge where condensation will collect.
  • Place the tray in the steamer, cover, and steam the rice for 20 minutes, or until the rice is shiny, tender, and slightly chewy; the hominy is already cooked. To ensure even cooking, give the rice a big stir with chopsticks or a spatula 2 or 3 times during steaming. Take care when lifting the lid that you don't allow any condensation to drip onto the rice and hominy and that you are not burned by the steam. At the end of each stirring, gather the grains back into a mound in the center, leaving a 1-inch border between the rice and the edge of the steamer tray. When the rice is done, lower the heat to keep it hot.
  • While the rice and hominy steam, put the sesame seeds, the remaining 1/2 teaspoon salt, and the 1 tablespoon sugar in a mortar and crush with a pestle to a fine, sandy texture. (Or, use an electric mini-chopper and process for 10 seconds.) Set aside.
  • To serve, turn off the steamer, fluff the rice and hominy, and transfer to a platter, spreading it out into a 1-inch-thick layer. Sprinkle the mung bean on top and then follow with the sesame mixture and finish with the shallot. Serve with a small bowl of sugar for anyone who wants a little extra sweetness.

  • Preparation Heat the oil and unsalted butter in a saucepan over medium-low heat until it reaches 220 degrees. Reduce the heat to low, add the shallots, and cook until they are a rich golden brown, 35-40 minutes. The temperature should stay below 260 degrees. Stir the shallots occasionally to make sure they brown evenly. Remove them from the oil with a slotted spoon, drain well, and spread out to cool on paper towels. Once they have dried and crisped, they can be stored at room temperature, covered, for several days. Peel the turnips to remove the waxy skins and cut them into generous 1-inch chunks. Place them in a large saucepan with water to cover and 1 ½ teaspoon salt. Bring to a boil and simmer, covered, until easily pierced by a paring knife, about 40 minutes, Drain. Chef's notes: Yellow turnips, or rutabagas are those large waxy root vegetables available during autumn and winter. Cut off the ends of the turnips and then peel them. When cutting hard root vegetables, be careful with the knife! We used the pre-cut turnips from Stew Leonards that come in a 2 pound container. This saved us a step and made the recipe much easier to have them already pre-cut. Cook everything completely at your home and bring over in a large saucepan to heat up at the host's home on a top burner.
