Crispy squid with garlic mayonnaise is a classic dish that combines the flavors of tender, succulent squid, crispy breading, and a flavorful garlic mayonnaise sauce. This dish is a popular appetizer or main course, and can be enjoyed by people of all ages. The key to making the perfect crispy squid is to use fresh, high-quality ingredients and to cook the squid properly. Overcooking the squid will make it tough and chewy, so it's important to cook it just until it is opaque and tender.

Steps:
- Heat the oil in a smallish saucepan and while it's left to heat up cut the thawed squid into 1/2-inch rings.
- Put the cornstarch, semolina and seasoning into a plastic freezer bag. Add the squid rings and tentacles and then toss to coat.
- When the oil is hot enough, which is when it sizzles up fiercely when you drop in a small cube of bread, fry the squid in batches to get the most golden crunchiness.
- A couple of minutes per batch is all you should need.
- Mince the garlic into the mayonnaise to serve alongside the fried squid.

Steps:
- The lightly beaten eggs should be in one medium bowl and the bread crumbs in another. Season both the eggs and the bread crumbs with salt and pepper. Take the squid rings and tentacles and coat them with the egg. Remove and allow any excess egg to drip off, and then roll the pieces in the bread crumbs. Place them in a single layer on a baking sheet and refrigerate.
- In a medium-size saute pan, heat the chile oil lightly. Add the garlic and season with salt and pepper. Take care not to brown the garlic but instead sweat it so that the liquid emerges and it becomes translucent. Add the sliced celery and stir to coat everything evenly. Cook for 1 minute. Stir in the lemon slices and set aside to cool.
- Pour the oil into a heavy-bottomed pot (or alternatively, a deep fryer). Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the squid once they are cooked.
- When ready to serve, drop the squid, in small batches, into the oil. Fry until crispy, turning on both sides with a slotted metal spoon, about 3 to 5 minutes. Drain them on the lined baking sheet. Season immediately with salt and toss with the basil leaves. Serve the garlic sauce on the side or drizzle over top. Serve immediately.

Steps:
- Cut the tentacles off the squid and put in a bowl. Slice the squid tubes into roughly 1cm thick rings and add to the bowl. Heat the oil in a large heavy-based pan over a low heat, ensuring it is no more than two-thirds full.
- For the aïoli, mix the mayonnaise, garlic, saffron and lemon juice in a small bowl. Set aside.
- Toss the squid with the flour, cornflour, baking powder, cayenne and ½ tsp salt. When the oil has reached 170C on a thermometer, or when a cube of bread is dropped in and turns golden brown in 30 seconds, deep-fry the squid in batches for 2 mins, or until lightly golden and crisp. Set aside on a tray lined with kitchen paper. Serve the fried squid with the aïoli on the side for dipping.

Tips:
- To ensure the squid is crispy, make sure the oil is hot enough before frying. You can check this by dropping a small piece of squid into the oil. If it sizzles immediately, the oil is hot enough.
- Don't overcrowd the pan when frying the squid. This will prevent the squid from cooking evenly.
- Fry the squid in batches if necessary. This will help to prevent the oil temperature from dropping too much.
- Cook the squid until it is golden brown and crispy. This will ensure that it is cooked through.
- Drain the squid on paper towels to remove any excess oil.
- Serve the squid immediately with garlic mayonnaise or your favorite dipping sauce.
Conclusion:
Crispy squid with garlic mayonnaise is a delicious and easy-to-make appetizer or main course. It is perfect for a party or a casual meal. The squid is crispy and flavorful, and the garlic mayonnaise adds a creamy and tangy touch. This dish is sure to be a hit with everyone who tries it.
