A quick, easy and delicious way to prepare potatoes. If I'm feeling particularly calorie conscious (which doesn't happen as often as it should). I score the potatoes, spray with Pam and place sprayed side down on the non stick cookie sheet.) Either way, they're delicious.

Time 1h25m

Number Of Ingredients 5

4 medium idaho potatoes
1/2 stick butter
salt and pepper
pinch paprika
may vary seasonings: seasoned salt instead of salt, garlic powder, onion powder, etc.

Steps:

  • 1. Wash potatoes and cut in half lengthwise. Dry with paper towel.
  • 2. Score the cut surface of each potato half with a sharp knife in a criss-cross pattern, about 1/8" deep.
  • 3. Place potatoes on a baking sheet and lavishly spread butter on top of each. Salt and pepper to taste.
  • 4. Bake in a 350-degree oven for 1 hour. Sprinkle potatoes with paprika if desired and bake 15 minutes more.
  • 5. We like this with chicken fried steak or Swiss steak. Serve with butter and sour cream.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are best for this recipe. They hold their shape well and get crispy on the outside while staying fluffy on the inside.
  • Cut the potatoes evenly: This will help them cook evenly. Use a sharp knife to cut the potatoes into 1/4-inch thick slices.
  • Soak the potatoes in water: This will help remove the starch from the potatoes and prevent them from sticking together. Soak the potatoes in cold water for at least 30 minutes before cooking.
  • Season the potatoes well: Use a combination of salt, pepper, garlic powder, and paprika to season the potatoes. You can also add other herbs and spices to taste.
  • Cook the potatoes on high heat: This will help them get crispy on the outside. Cook the potatoes in a hot skillet over medium-high heat until they are golden brown and crispy.
  • Serve the potatoes immediately: Criss cross potatoes are best served hot and crispy. You can serve them with your favorite dipping sauce or as a side dish to any meal.
