8 boneless skinless chicken thighs (trimmed of extra fat)
1 tablespoon olive oil
½ cup ketchup
¼ cup low sodium soy sauce
¼ cup honey
2 tablespoons dark brown sugar
1 tablespoon fresh ginger (grated)
1 tablespoon sriracha
3 cloves garlic (minced)
2 green onions (thinly sliced)
4 cups cooked white rice (for serving)
4 tablespoons cilantro (for garnish)

Steps:

  • Season chicken thighs with salt and black pepper to taste.
  • Heat olive oil over medium-high in a 12" skillet. Cook 3-5 minutes until browned on each side.
  • In a medium sized mixing bowl add ketchup, soy sauce, honey, dark brown sugar, ginger, sriracha and garlic. Whisk to combine.

2 tablespoons melted butter (can use less)
4 russet potatoes (cut into about 1/3-inch sliced)
2 1/2 cups carrots, peeled and chopped into about 1-1/2-inch pieces (or use baby carrots)
1 cup frozen peas
2 teaspoons seasoning salt, divided (or to taste, or use white salt)
black pepper
1/4 cup chicken broth
1/4 cup white wine
1 tablespoon minced fresh garlic (or to taste)
1 teaspoon dried thyme (or to taste)
1 1/2 teaspoons paprika
3 chicken thighs (skin and bone-on)
3 chicken legs (skin on)

Steps:

  • Brush the inside of a 6-quart crock pot with melted butter.

40 large cloves hardneck or purple garlic, unpeeled
8 large skin-on, bone-in chicken thighs
Kosher salt and freshly ground pepper
2 tablespoons EVOO
1 small bunch Tuscan kale or spinach, stemmed (if using kale, thinly slice)
4 tablespoons butter
1 pound cremini mushrooms, thinly sliced
2 tablespoons finely chopped fresh thyme
1/2 cup Marsala wine
3 to 4 cups chicken stock
Freshly grated nutmeg
Ciabatta bread, for mopping

Steps:

  • Preheat the oven to 400 degrees F.
  • Simmer the garlic in a saucepan of water until tender, about 10 minutes (this will soften the flavor). Drain and let cool, then pop the jackets off the cloves and reserve.
  • Sprinkle the chicken with salt and pepper. Heat the EVOO in a large ovenproof skillet. Add the chicken, skin-side down, and cook until the skin is browned and very crisp, 7 to 8 minutes. Flip the chicken and brown the other side, 3 to 4 minutes more. Remove the chicken to a plate. Melt the butter into the fat remaining in the skillet and add the mushrooms and thyme. Cook until the mushrooms are browned and very tender, 12 to 15 minutes. Deglaze with the Marsala, stirring and scraping up any browned bits from the bottom of the skillet with a wooden spoon. Return the chicken to the skillet, skin-side up, and add the garlic. Add enough stock to come up and around the chicken but not cover the skin. Transfer the skillet to the oven and cook for 45 minutes.
  • Transfer the chicken to a warmed platter and loosely tent with foil. Reduce the sauce on the stovetop until it is thick enough to coat the back of a spoon. Add the kale and cook until just wilted, then stir in a bit of nutmeg.
  • Spoon the sauce and kale into shallow bowls and top with the chicken. Serve with warm bread for mopping.

10 chicken thighs (about 3 3/4 pounds, bone-in, skin removed, trimmed)
4 slices bacon (cooked ~ reserve 2 tablespoons bacon fat)
1 large onion (thinly sliced)
4 garlic cloves (minced)
1 teaspoon dried thyme
1 teaspoon fennel seed
1 teaspoon fresh ground pepper
1 bay leaf
1 cup dry white wine (Or, substitute 1 cup reduced-sodium chicken broth mixed with 1 tablespoon fresh lemon juice)
1 (28 ounce) can tomatoes (with juice, coarsely chopped)
1 teaspoon salt
1/4 cup fresh parsley (finely chopped ~ optional, for garnish)

Steps:

  • Place the skinless, bone-in chicken thighs in a 4-quart (or larger) crock pot.
  • Cook bacon ~ drain well ~ crumble bacon over chicken in crock pot.
  • IF YOU HAVE THE TIME, cook onion, over medium heat, in 2 tablespoons reserved bacon fat, stirring, until softened, 3 to 6 minutes. Add garlic, thyme, fennel seeds, pepper and bay leaf and cook, stirring, for 1 minute. Add wine, bring to a boil and boil for 2 minutes, scraping up any browned bits.   • IF YOU DON'T HAVE THE TIME, place the following into crock pot over the chicken: crumbled bacon, sliced onion, garlic, thyme, fennel seeds, pepper, bay leaf, wine, tomatoes and their juice, and salt!
  • Cover and cook until the chicken is very tender, about 3 hours on High, or 6 hours on Low. Remove the bay leaf.
  • Serve chicken and sauce over cooked noodles, or rice ~ garnish with chopped parsley.
