2 lbs boneless skinless chicken thighs, each cut into quarters
2 medium red peppers, cut into 1/4 inch thick slices
1 onion, thinly sliced
1 (28 ounce) can plum tomatoes, drained
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon fennel seed, crushed
3 slices orange rind
1/2 cup fresh basil leaf, chopped

Steps:

  • Place all ingredients in the slow cooker, except for the basil leaves.
  • Mix thoroughly.
  • Cover; cook on Low for 7 to 9 hours or on high for 3 to 4 hours.

1/2 cup red wine

Steps:

  • Cut up the chicken into portions. Cut the potatoes into cubes, slice the onions, garlic and peppers.
  • Place chicken and potatoes into the crock pot dish.

2 teaspoons dried basil
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 cup diced yellow bell pepper
1 (16 ounce) can navy beans, rinsed and drained
1 (14 ounce) can pasta-style chunky tomatoes, undrained

Steps:

  • Place chicken in slow cooker and sprinkle with basil, salt and pepper.

1 can(s) cannellini beans, rinsed and drained
1 Tbsp balsamic vinegar
2 tsp herbes de provence
2 garlic cloves. minced
2 chicken breasts, boneless and skinless
salt and pepper
2 tsp extra virgin olive oil, divided
2 oz chevre, divided

Steps:
